The aroma is a refreshing lactic acidity and a hint of rice flavor. It does not give off a sense of maturity.
The mouthfeel is also lactic acid and umami. The acidity and umami are both firm, yet gentle. The sweetness is subtle and subdued, but it brings the whole thing together. There is a sense of unity. And even though it is aged, it is clean and fresh.

When swallowed, it has a hint of acidity, but the umami remains lumpy and does not expand at all. Warmed immediately. In addition to the rice aroma, there is a spice-like aroma. This is the first time I saw a brand whose kanji cannot be written.
It is said to be a sake from a junmai (pure rice) brewery made from various types of sake rice.
Kame-no-o is a new sake, and I thought it would be an austere sake, but it was juicy and fruity.
It was juicy and fruity. The dryness of the sake was strong, and it could be enjoyed in various ways, such as warming it up a little.
This is a cold sake commemorating our 100th anniversary. Since the refrigerator was full after I bought it, I stored it in the underfloor storage. It is smooth on the palate, but slightly irritating to the tongue. I think this is the beauty of unfiltered unpasteurized sake.
When the temperature rises a bit, you can feel the smoothness. Sake is really good!
