This is an original sake created by Ishii Shuzo, the brewer of Toyoake, for the sake project in Toyosu. I've had one with the same label before, but it was a draft sake and this one is bottle-fired.
The aroma is gorgeous, with a sweet and sour grape-like flavor.
Perhaps because it is fire-aged, the juiciness is reduced and the aroma is relatively mild, but it has a deep aroma that reminds me of sweetness and umami, which is more like sake than fruit juice.
