This is an original sake created by Ishii Shuzo, the brewer of Toyoake, for the sake project in Toyosu. In contrast to Toyoake, it is a light, silky blue melon with a hint of banana, and while it is silky, it gradually turns tart and finishes with a moderate bitterness. The aftertaste is also sweet with a hint of sweetness that gradually fades away.
The concept is
A sake to be enjoyed in a park in Toyosu while looking at the waterfront.

and it is perfect with sashimi and sushi. The taste is similar to that of Kangiku and Eiko Fuji.

This sake was also given to me by my subordinates as a farewell gift. This is the flagship sake of Ishii Shuzo, a sake brewery that has been cooperating with us in our sake brewing project.
It has a strange feeling of sweetness and bitterness at the same time. There is bitterness in the sweetness, and in the latter half, the bitterness is very strong and sharp. It is more bitter than pungent. The sweetness is so strong that the pungency is not so strong. The sweetness is suppressing the pungency.

Nice aroma, clean and sweet.

I've had one with the same label before, but it was a draft sake and this one is bottle-fired.
The aroma is gorgeous, with a sweet and sour grape-like flavor.
Perhaps because it is fire-aged, the juiciness is reduced and the aroma is relatively mild, but it has a deep aroma that reminds me of sweetness and umami, which is more like sake than fruit juice.
The taste is mellow, but with a full-bodied sweetness and umami.
It has a very rich flavor with a slightly matured, honey-like taste.

Not much acidity, but clear and sharp, making it easy to drink.
This is an award-winning saké with a taste that will appeal to your tastes, and I personally highly recommend this bottle!

This summer-only Toyoake has a beautiful purple and green label with an impressive hydrangea on it.
Not many stores in Kansai carry it, and of course this was the first time for me to try it ✨.
The sweetness is very intense, but it flows with a bit of sourness and bitterness as well.
It is a very well-balanced sake, and I wondered if I could enjoy the changes if I drank it with some time left 💡.

I was going to buy hana-yosu to go home but couldn't 😅I'm happy with the result since other people brought hana-yosu 🤣I drank it at chuin the week before and enjoyed it so I decided to go with this sake😊It's tough to go home via Kanazawa 😓.

Toyoake in Satte, Saitama Prefecture.
When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home.
It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character.
The subtitle and the message on the back label are also good.
The waka poem written on the box? on the box is also nice.
The slight coloring is due to the limited amount of charcoal used in the filtration process.
This is my first visit in a season,
We started with Toyoake on the far right.
This one has a nice gaseous and spicy taste, and the feeling of it passing through the nose and down the throat is good.
Slightly effervescent. Rich and tasty. It has a sour taste and an aroma reminiscent of bananas. The mouthfeel is a bit languid, with a hint of sweetness lingering on the palate.
"Ho-Mei Junmai Ginjo" won the Gold Medal in the SAKE category of a world-class wine competition. It is exceptional to have it poured directly by the president. Thank you as always.
