This is local sake brewed by Takagi Brewery in Yamagata. This brewery is very famous for Jyuyondai, super premium sake. But, this brand is very smooth and fruity as I just tried it.
This sake must be stored in a low temperature, so careful for storage temperature.
The aroma is discreet and has a clean fruity quality.
The mouthfeel is soft, with just a hint of bubbles.
It has what is called a mellow sweetness and a good sharpness. There is a slight sourness to the sharpness, but it comes from the alcohol combined with bitterness. It seems to have the umami that sake drinkers love, but the "umami" I mentioned in my last post has been broken down and expressed as above.
I have been drinking a lot of junodai recently, so it has been difficult to pair it with fatty foods, but I would like to try this kind of punchy sake with sautéed pork.
The description reads, "A mellow honjozo with a refreshing taste and full of rice flavor.
This is indeed a refreshing sake, as one would expect from Jyushidai. This is a dish that makes you feel like you've had a great time.
When the temperature rises to a certain degree, it comes into its own. The umami and lingering bitterness are different. And the sense of alcohol is gone. I can't deny the possibility that my taste buds have become stupid due to drunkenness, but I can't help but enjoy this dish. I want to match it with yakitori with sauce.

A bottle I drank during this Bon Festival. Stable taste. When opened, it had a strong sweetness and was smooth and light. As the day goes by and the temperature rises, it becomes more mellow. The change over time was enjoyable and satisfying. I often drank it with fish dishes.

this is more than enough for everyday drinking.

Tokusen Asahitaka cold stored sake. It has a mild but pleasant aroma with a hint of iso-type.
It has a slightly thick and flabby texture on the tongue, a tangy and moderate acidity, a beautifully spreading umami flavor, and a pleasant gentle sweetness that also reminds one of wasanbon (a type of Japanese sweet bean paste).
While the taste is firm, the overall crispness is good, with a hint of bitterness and astringency from the acidity in the mid-palate.
Compared to the Honmaru, this sake would be a good match as an every-night food sake.
I'll have to try it again, as I'm sure it goes well with soft heated sake.
