The aroma is reminiscent of peaches, with little sweetness and a predominance of acidity. It is a special honjozo sake, but the sense of alcohol is weak. The taste is generally dry, but it is a delicious sake with a fruity flavor that is not too refreshing.

Kagura-san is the place to go for a drink in October! This time, instead of the all-you-can-drink standing drink, we decided to sit on chairs and order rare sake at our seats 😊. We got it from Asahitaka, a sake distributed in Yamagata Prefecture by the Takagi Brewery of Jyushiyo 😃. The aroma was faint but I couldn't tell. It has a beautiful mouthfeel with a clean sweet flavor and just a hint of alcohol. The acidity is also very slight, so it is very easy to drink and has a beautiful umami flavor. The rare sake menu is also attached. There was also a 90ml rare sake of Jyushiyo for 27500 yen 🤔 I wonder what kind of people will drink it 🤔.

At a sake bar in Yamagata. Apparently it is not easy to drink outside of the prefecture😲. It has a fruity and refreshing taste like Jyushiyo, but it is also soft and calm. I felt it was easy to match with meals. Of all the sake we drank in Yamagata My husband especially liked this sake 🍶.

Asahi Hawk New Sake Nama-Shu" by Takagi Shuzo This locally distributed sake is brewed by the Takagi Shuzo brewery in Murayama City, Yamagata Prefecture, known for its "Jyushiyo" brand. While "Jyushiyo," which has become synonymous with hard-to-find sake, is not available in the local area, "Asahitaka" is almost exclusively available in the brewery's home town. It has long been a popular local evening drink, but some say that the quality of sake has improved with the advent of "Jyushidai. Founded in 1615 in the early Edo period (1603-1868), the brewery has been in business for more than 400 years. The current owner is the 15th generation, Akitsuna Takagi, who graduated from the brewing department of Tokyo University of Agriculture and worked in the distribution industry in Tokyo before returning to his hometown at his father's request in 1993 to take over the brewery. He eventually introduced "Jyushiyo" to the world, which is said to have been named in honor of his father. Asahitaka" has a slightly sweet aroma and a smooth taste, and some say it reminds them of "Jyushidai." It is a special honjozo made with natural spring water from 25 meters underground, and is highly valued for its soft taste with a ginjo aroma, fresh texture, and high cost performance. I drank Asahi Hawk for the first time. It's a habit-forming bottle .... It has a mellowness like an old sake. The umami spreads all over your mouth. When I realized that three of us opened a bottle, I lost my memory of it.

Asahi Hawk Fresh Stored 2024.4 There is not much of a sense of maturity, perhaps because it is ice cold stored. On the contrary, it is a strong sake which may be difficult to understand. The aroma is mild and gentle, but it is also iso-ish. After a smooth but round and soft texture on the tongue, a gentle and tangy acidity is pleasantly felt, followed by umami and a moderate sweetness. The overt aroma is also gorgeous but soft and calm, with a smooth and beautiful taste from the mid-palate and a pleasant light bitterness in the aftertaste. Personally, I have had many kinds of sake from Takagi Shuzo, but I think this is the best one to drink with food. Thank you very much for the sake.
