Polished rice 75%. It is said to be made from sake rice called "kogai". We asked for a heated sake. I asked for one with acidity that would go well with a heated sake. It was yellow in color, and the aroma alone was enough to make me nervous. It's the first time I've felt acidity in a hot sake. It's been a long time since I've felt it soak into my body. It works!
