First Kagoshima sake. This brewery is famous for "Takarazan". The color is almost colorless and transparent. There is no gas. It has a faint aroma. When we take a sip, the sweetness comes first, then the sourness, and finally the umami and the alcohol spread and converge. It was delicious.

This is another bottle that I won in a raffle at a liquor store. This is the second time I have had a bottle of Sentori. The aroma is subdued and has a chili-like flavor. The supernatant is sweet and sour, and when mixed with the cage, it has a yogurt-like flavor. Both are delicious. It is easy to drink with low alcohol and I finished it in 2 days. I think I'll drink the snowman next.

One of two bottles I won in a raffle at a liquor store. It has been a long time since I have had a Chiba sake. No chili, little acidity in the sip, sweetness and umami, and a long aftertaste. We enjoyed it very much.

Junmai Ginjo🍶Mizu Yondan Tailings Tangle Hon Nama ✨Yamada Nishiki🌾. Second glass of IMADEYA 😆. Bitter. Crisp. Sharp. Easy to drink. Clear ✨Supplied with potato salad. What is "mizu shidan"? I looked it up and found out that it is a process of adding water and enzymes to steamed rice to saccharify it after the so-called three-stage brewing process, or adding water as it is 🧐. IMADEYA Chiba Ekinaka 20250308 The description of the dish is as follows The "Sari" series is popular for its characteristic sourness and goes well with sushi, vinegared dishes, and dishes using Japanese citrus fruits. This is a raw sake with a hint of sake-like flavor that is only available at this time of the year. It has a mild aroma and a strong presence of rice flavor, and its characteristic acidity gives it a crisp aftertaste. Please enjoy it with a meal.

Nama sake ✨Rice produced in the Kikuchi River basin in Kumamoto Prefecture🌾. On the way back from Kururi Line, at IMADEYA corner bar in Chiba station 🍶. Kirakkoto ✨Sweet and sour white wine type. My wife says it smells like seme with a strong alcohol content. What is Go-No-Brewery? I looked it up and found out that it means rice grown in the Kikuchi River basin, sake brewed using the "nama-hashi" method, cultivated without pesticides or fertilizers, and brewed in wooden vats 🧐. IMADEYA Chiba Ekinaka 20250308 The menu is as follows. Discreet aroma of green apple and muscat fruits, with a hint of vanilla. The wine has a freshness from the dissolved gas, but the taste is viscous and concentrated, and the lingering aftertaste is superb, making it a slightly dry style.

A special 9th anniversary bottle of Shinmasa at a corner bar. The bottle is a beautiful red bottle, but unfortunately, we are not allowed to show a picture of it. The aroma is clean and fruity. It has a sweet and sour taste similar to that of apples, and is not like sake. It is just too delicious.

It's still good! The aroma is fruity. Fruits? I don't know. In the mouth, it's delicious. Throat feeling? I don't know how to describe it. I don't know if it's the right word, but it's smooth through and through. If you see the new moon after rain, buy it! The imprinting is complete.
