Is the rarity very high?
At room temperature.
It is heavy, but not as overbearing as the Junmai sake we had before. The acidity is strong. Slightly bitter aftertaste.
When heated, the umami and mellowness spread to the palate.
The aftertaste is very long.
Best with nabe dishes.
