At a sake bar. I have been curious about this sake bar in Fukuoka for a long time. The third bottle was a crowdfunded sake from Hiran. The owner is from Hirado, and according to him, this is the sake bar with the most close relationship with the Mori Sake Brewery in Japan. The sake brewer sometimes comes to the bar, and there was also a collaboration sake from Tobiran in the bar. The aroma was very fresh. Since it is made with No.6 yeast, which is the first of its kind in Japan, there is a hexagonal shape around the logo of "Hiran" on the label. It has an elegant and unique sweetness reminiscent of No.6, but the aftertaste is very refreshing. The aftertaste is short. Recommended for sake beginners.

Jyushidai Man-niji (tobin-enveloped, ice-cold matured, large top-grade Morohaku sake) It's called "Bankou" in Japanese. You sexy guys out there: ❗️ Don't read it in a strange way. It's a Daiginjo-selected sake aged in ice at -6℃ for 2 years. If you google it, you will find that the price is 24,000 yen for 720ml. ❗️ On the Rakuten market, the price is over ¥140,000 for 1,500ml ‼️ Hee hee, I'll get a stomach ache if I drink such an expensive bottle... 🤣 The Japanese paper on the label is embroidered with a luxurious feel and raises expectations: ⤴️⤴️⤴️ And what did I think when I actually drank it... Of course it's delicious 👍👍👍👍! It's not flashy, but it has an elegant appearance. Not too rich, not too light, just right... Comparison of Jikin Next is Junmai Ginjo Tojo Yamadanishiki! This one is definitely more "dayha" than the Yoshikawa Yamadanishiki! The aroma is like juicy ripe apples! On the palate, it is rich, full-bodied, sweet and delicious. The acidity is strong and the bitterness is moderate. In total, it can be categorized as a modern rich wine. ❗️ Tojo Yamadanishiki is definitely stronger in both aroma and taste, and the taste is easy to understand. Tojo is a typical full-bodied sweet-yummy type, while Yoshikawa is a moderate sweet-yummy type. The two areas are only about 20km apart in a straight line, but there is such a difference in taste. ❗️ I was so surprised! The world of sake is very deep. 〜〜〜〜‼️ To be continued

I wonder what Aizan💕 outside of Hyogo Prefecture is like. Let's see now... Ale ❓ The aroma is not too strong for a chrysanthemum. But when you taste it... I knew it was a chrysanthemum. Shinmasa No.6 A-type Spark (Junmai Nama-nihonjyu light nigori, sake made in wooden casks) From now on, we will compare 3 sparkling sakes! This red bottle with the blurry "6" looks like Coca-Cola, but I've always wanted to try it! Finally my wish came true 😊. The "A" in A-type means Aramasa! I didn't know that😅 And the rice milling ratio is 66%, so they are really focusing on 6! Among sparkling wines, I think this one has the most universal taste. It has no peculiarity and goes in smoothly. Unlike the regular version, this hanpukai version is a lightly nigori (lightly cloudy) activated sake! From here we went into the Shinmasa festival: ✌️ The 3rd drink Shinmasa No.6 Fermen-type (Junmai Nama-nihonjacu, pure raw sake, made in wooden casks) A very, very rare hanpukai sake! According to the owner, it is called Genroku-zukuri (Genroku brewing?). (Genroku brewing?), a sake brewing method established in the Edo period (1603-1868). I googled it and found that it is a method of aging that produces a low-alcohol but rich finish. In fact, it was a beautiful sake with an unbelievably rich flavor despite its low alcohol content of 12 degrees 👍. The first glass was a Junmai Daiginjo-Namaishu (Junmai Daiginjo-Namaishu, aged at ice temperature in a bottle). This sake was made to commemorate the 400th anniversary of the Takagi Brewery and is currently the third most expensive sake in the Jyushidai lineup and is extremely hard to find! Thank you very much 🙇. Named after the ancient sight of white clouds rising and falling in the sky to bring forth a good omen and shine brightly. Expectations are high 😊. I'll eat it with all my heart. The full-bodied, sweet and delicious taste that spreads quickly in the mouth! I wonder if this overwhelming richness is brought about by the fact that the rice is polished to 35%... It finishes with a long, lingering finish. To be continued

I was in a good mood after making an unexpected connection and found the ultimate premium sake in the fridge. The sweetness and acidity are all at a high level while being gentle and unobtrusive. The fact that they coexist well without being too assertive is wonderful👍. We decided to take T.KISO's acquaintance couple and a Korean young man to Hakata at night together with his sister who is a physical monster, not because "it's been 100 years since we met here" but because "this is also a chance of some kind" 😅.
