This is my favorite sake made with Ginga. It has a perfect balance of sweetness, acidity, and astringency that pops on the tongue. The mild aroma and umami lingers gently in the aftertaste. It's just delicious! is the only word that comes to mind. I would like to pair it with a simple salad with a separate dressing.

The attack is not strong for a sake with a sake strength of +22 (despite the number). The acidity is quite forward, but the umami is also present, making it a great cold sake or even better when heated. It is best paired with darkly seasoned dishes such as mackerel miso or simmered goldfish.
