Put shichimi on the stewed motsu and drink sake!
I am so happy!
One of our regular customers has just left, so the master and I are discussing about sake.

Alcohol content: 16%. 日本酒BAR-炎-HomuraThis is my favorite sake made with Ginga.
It has a perfect balance of sweetness, acidity, and astringency that pops on the tongue.
The mild aroma and umami lingers gently in the aftertaste.
It's just delicious! is the only word that comes to mind.
I would like to pair it with a simple salad with a separate dressing.
日本酒BAR-炎-HomuraThe attack is not strong for a sake with a sake strength of +22 (despite the number).
The acidity is quite forward, but the umami is also present, making it a great cold sake or even better when heated.
It is best paired with darkly seasoned dishes such as mackerel miso or simmered goldfish. 日本酒BAR-炎-HomuraAfter the sweetness spreads, it tingles and pops on the tongue, and the astringent taste washes away the sweetness nicely, making it a delicious sake that is perfect for summer.
This is a perfect sake for summer, and I highly recommend pairing it with fried chicken. 日本酒BAR-炎-HomuraThe mild aroma, modest sweetness, and cool beauty of the sake, with the acidity spreading as the sake is sipped.
I want to match it with baked cheesecake. しんしんSYTonight's Auras
The punchiest of the three, a dry Junmai sake.

This sake was created by the "i-sake Project," a sake club made up of university students in Iwate Prefecture, and the Drunken Sake Brewery. This junmai ginjo-shu was created with the concept of "a clean, fruity taste" and all processes, from rice cultivation to brewing, were done together. AKABU" summer sake, which is very popular every year, is "Natsu Kasumi Natsu Kasumi" with a hint of ori.
It has a refreshing aroma and a gentle mouthfeel, but once the oli is entwined, the flavor and acidity spread just right.
The crisp aftertaste is perfect for summer!
On hot nights, pour a glass of Natsu Kasumi Natsu Kasumi over ice for an even gentler taste. しんしんSYRevisited the restaurant that took care of me at the Tohoku Off-line Meeting the other day to thank you for your hospitality.

Yamada-Nishiki 45 Junmai Unfiltered Nama-shu, Junmai Daiginjo standard Junmai-shu made from luxuriously polished "Yamada-Nishiki", the king of sake rice, to 45%.
It has a fresh ginjo aroma like apple or pear, rounded sweetness, straightforward and well-balanced. The taste is clean to all intents and purposes, without any cloying flavors, and is refreshing and easy to drink. It is so good that it overturns the common sense of junmai sake, and it is inexpensive. This price for 45 polished Yamada-Nishiki is unbelievable. RecommendedContentsSectionView.title
