ZEN is named after a Zen Buddhist priest (a toji, who is also the head priest of a temple, apparently).
The sake is brewed according to the "aesthetics of subtraction".
It is designed only to match with a meal, so the aroma and sweetness are suppressed.
On its own, it is unfinished, and only completed when combined with a meal ✨.
On its own, it's mildly acidic and mildly rice-like.
It's like a dry but full-bodied...
While eating....alcohol is a garnish. I'm a ninja of the drinking world 😆 , just like I'm told to enjoy my food 😊 .

It has been sitting in the refrigerator for over a month since I bought it.
This is my first divine turtle 🎵.
It's getting cold, so I chose this one when I heard it was a delicious drink to warm up.
First, take a sip with cold sake. The aroma, sweetness, not so much. Bitterness and dryness, and a refreshing taste.
As it warms up, you can get a strong taste of the rice and a strong bitterness in your mouth that snaps cleanly.
It's good, but I don't like the bitterness 😅.

I've been curious about it for a while, so I took the plunge and bought it.
Sweet, sweet 🎵.
They use Akita's Kurikoma yogurt and Akita Bijin no Himitsu sweet sake.
It's a perfect dessert drink - ⤴️.
The taste is all sweet and sour from the yogurt, with a touch of alcohol at the end.
This is delicious!
