ZEN is named after a Zen Buddhist priest (a toji, who is also the head priest of a temple, apparently).
The sake is brewed according to the "aesthetics of subtraction".
It is designed only to match with a meal, so the aroma and sweetness are suppressed.
On its own, it is unfinished, and only completed when combined with a meal ✨.
On its own, it's mildly acidic and mildly rice-like.
It's like a dry but full-bodied...
While eating....alcohol is a garnish. I'm a ninja of the drinking world 😆 , just like I'm told to enjoy my food 😊 .
The recommended dish was buttered scallops and sukiyaki, but I think it's quite good for a wide range of dishes 👍
