Special Junmai Sake 🍶New Sake Shiboritate Nama Sake✨Hokkaido Comet ☄️🌾. Aroma is a bit heavy 😳, but it's quite fruity on the palate. Quite fruity on the palate. It has a nice dry melon flavor and good acidity. My wife says it is light and delicious. I'd like to pair it with grilled fish. It would be great with grilled fish, as it is from Hokkaido 😆. Jizakaya Kodama's X comment Mild aroma and soft flavor. The clarity and edge of this year's wine is moderate, and it is characterized by a "mild umami" and "acidity that feels gentle despite the same numerical value". I wanted to explore Chiba sake, so I bought a bottle of Narumi, which I had been curious about for a while. A while ago I drank the "white" sake, but this time I went for the "blue" one. The first aroma is softly sweet with a hint of acidity. In the mouth, it has juicy sweetness and umami with mild acidity. Depending on how you drink it, you may feel a heavy acidity like fruit vinegar made with grain vinegar. My favorite acids are lactic acid like plain yogurt and citrusy fresh acid, so this is a little different, but it was delicious 🍶✨. It's no surprise, but Narumi has a lot of different kinds. I'll have to talk to the store about it 🤔.

A sake from Fukushima that I wanted to drink. It may be similar to Sharaku, also from Fukushima. As the label says, it is well-balanced and tastes good without being boring! The oriki was almost imperceptible.

I managed to get some while it was quickly sold out, and I'm glad I did... The supernatant alone is delicious, but mixing the lees makes it even tastier by increasing the piquancy and sweetness of the rice! Maybe sweeter than last year? I'm glad I got a bottle. It will run out really quickly🤔.

Warehouse Review 80 It's been a couple of years since my last visit to Shinomine Yuuyuu. This time, I've got a bottle of sake for you. The nose has a refreshing acidity reminiscent of citrus fruits. The citrus aroma is really refreshing when you drink it. There is not much sweetness, so it is considered dry, but the umami, aroma, and acidity make it a very drinkable wine. The bitterness comes out early on, but combined with the aroma and acidity, it gives the impression of biting into a juicy citrus fruit with its peel. Ponkan or something like that comes close to my image. I ate the avocado with a little sesame oil and salt, and it went well with the avocado. Wok-fried yam and pork belly...of course it goes well with it! I love the wide range of dishes that can be served in Japanese, Western, and Chinese dishes. And the sake of Chiyo Sake Brewery is characterized by the fact that as the day goes by, the corners are removed and the taste becomes more delicious. On the ninth day, at room temperature, I felt a grape-like flavor in the back of the sake that is similar to wine, and this was also delicious...lol! It's not flashy or poppy, so it may not be great for everyone, but for those who know how to enjoy it with food, it can be a great drink.

Collection Review 78 Tomatoes have a pretty unique flavor, don't they? It has a sour taste, and from there it has a botanical taste that can only be described as tomato no matter how you describe it, and it is quite unique. Something like green shimmer can be described in a similar way, but that's how I would describe it if I were to use an analogy. LOL! Overall, it has a crisp impression with a touch of citrus. That's because it uses white malted rice to produce a lot of citric acid, so it has a strong acidity that drowns out the sweetness. At the same time, the unique botanical flavor that is typical of Honkin is unique, and it gradually seeps in afterwards. [The taste shifts in the following order: [sourness → sweet flavor suppressed by sourness → unique flavor → bitterness → unique flavor], but I wonder if the bitterness can be felt from the beginning...it seems to be developing differently with each sip...I must be getting drunk, lol. I would definitely recommend people who want to enjoy not only the delicious taste but also the individuality to take the time to drink Honkin. Personally, I like it because I think it goes well with the acidity of kimchi. It also goes well with tomatoes, as I mentioned in the tomato example. Or rather, it goes extremely well with appetizers in general. It goes well with sausage with mustard, or even chorizo if you like.

Review 63 of the collection This is the first Miyako Bijin in a long time. This is the third time I have had this sake, following the regular Yamahai and Rafale. I wanted to try this sake because it is famous by rumor, so I drove two hours one way to buy it! I opened the bottle with a sense of nervousness as I was warned that it might explode! ...... What is it? No fizz at all? I opened it in May, so I let it sit for too long. I think it might be better to let it sit for a month or two. I wonder...it has a sweetness and umami like melon sherbet! I was a little surprised because I didn't think it was iso-ish! Lactic acidity, nigori, iso-type and my favorite one is here! It's like Abé, but it's not as sweet as I thought it would be. The sweetness is absorbed and mixed by the nigori and umami, so it becomes a mess. However, the sweetness disappears in the final aftertaste, leaving a soft aftertaste. Surprisingly, there is a strong nuance of alcohol, but I probably wouldn't mind if it left a fizzy feeling. If I buy it next year, I will open it as soon as possible. As expected, from the second day, the corners are removed and it becomes easy to drink at once and tastes great! I usually drink only 1 gou, but I drank so much that I drank 2 gou.

Inari for the first time. I had always wanted to try Inari. Last year I went to buy it but couldn't because it was sold out, so this year I went to buy it not too long after it was released. The classic image of the package, the thick texture, and the alcoholic aroma were just as I had imagined. And when I actually drank it, I found that it tasted just as good as the image I had of it. It is a very strong sake with a strong umami taste of rice. It is just as I imagined, isn't it? LOL! The impression is that the mild acidity and alcohol give it a contour while tightening the whole. The alcohol content is around 17 or 18? What! 16? There are not so many unnecessary tastes, but the taste itself appeals to us like a mountain. It is delicious, but it may be surprisingly difficult to drink for sake beginners who are used to the latest sake. It is a very strong sake, so if you eat light-flavored Japanese food, you may be defeated by the sake. I paired it with strong flavored food. If you are going to drink it with Japanese-style food, it might be better to add an ice cube. For some reason, on the fourth day, it became mellower and was unusually easy to drink while maintaining its originality.
