Tomatoes have a pretty unique flavor, don't they? It has a sour taste, and from there it has a botanical taste that can only be described as tomato no matter how you describe it, and it is quite unique. Something like green shimmer can be described in a similar way, but that's how I would describe it if I were to use an analogy. LOL!
Overall, it has a crisp impression with a touch of citrus. That's because it uses white malted rice to produce a lot of citric acid, so it has a strong acidity that drowns out the sweetness. At the same time, the unique botanical flavor that is typical of Honkin is unique, and it gradually seeps in afterwards.
[The taste shifts in the following order: [sourness → sweet flavor suppressed by sourness → unique flavor → bitterness → unique flavor], but I wonder if the bitterness can be felt from the beginning...it seems to be developing differently with each sip...I must be getting drunk, lol.
I would definitely recommend people who want to enjoy not only the delicious taste but also the individuality to take the time to drink Honkin.
Personally, I like it because I think it goes well with the acidity of kimchi. It also goes well with tomatoes, as I mentioned in the tomato example. Or rather, it goes extremely well with appetizers in general. It goes well with sausage with mustard, or even chorizo if you like.
