This is the first Miyako Bijin in a long time. This is the third time I have had this sake, following the regular Yamahai and Rafale. I wanted to try this sake because it is famous by rumor, so I drove two hours one way to buy it!
I opened the bottle with a sense of nervousness as I was warned that it might explode! ...... What is it? No fizz at all? I opened it in May, so I let it sit for too long.
I think it might be better to let it sit for a month or two.
I wonder...it has a sweetness and umami like melon sherbet! I was a little surprised because I didn't think it was iso-ish! Lactic acidity, nigori, iso-type and my favorite one is here!
It's like Abé, but it's not as sweet as I thought it would be. The sweetness is absorbed and mixed by the nigori and umami, so it becomes a mess. However, the sweetness disappears in the final aftertaste, leaving a soft aftertaste.
Surprisingly, there is a strong nuance of alcohol, but I probably wouldn't mind if it left a fizzy feeling. If I buy it next year, I will open it as soon as possible.
As expected, from the second day, the corners are removed and it becomes easy to drink at once and tastes great! I usually drink only 1 gou, but I drank so much that I drank 2 gou.
