A Junmai Daiginjo from Amami that I have wanted to drink for a long time but could not afford the high price.
40% polished rice with 901 yeast.
It is ethyl caproate based and has a strong apple aroma.
Compared to other specs, I could feel the daiginjo character.
I think this is the best as a food sake. 南十字輝7/10

Of all the wines we compared, this one seemed to be the most distinctive.
It has a gorgeous aroma, lightness of mouthfeel, and a freshness that makes it easy to drink even though the bottle has been open for a long time.
It was the best tasting of all the wines we drank without food. 南十字輝7/10

More grapey than apple compared to daiginjos.
Sake quality was quite favorable, with more acidity and softness than sweetness.
Compared to the others, the aftertaste had a slightly difficult sensation to pass down the throat.
