The brewing process has not been changed for 40 years, and it is indeed a good old-fashioned sake. It has the fullness of rice, a gentle sweetness, and a sake-like quality that comes out in the middle and leaves a nice aftertaste at the end. With a rice polishing ratio of 80%, one would expect it to be a bit more robust, but it is beautifully balanced, and as one would expect from a long-established company!
It tingles on the tongue quite a bit. Soft and fluffy aroma with a banana-like overtone. Not too sweet, but a delicious sake!
