A glass of sake with sushi in Numazu, Shizuoka Prefecture. It was a delicious aperitif. The sushi that followed was also enjoyable, including chutoro (medium fatty tuna), squid, nodoguro (Pacific bluefin tuna), clams, black rockfish, spring onions, salmon roe, and shrimps. Personally, I enjoyed the nodoguro and kuromutsu. Rice : - Purity : 50%. Japanese : -

Extra Edition. I did not get this on a business trip, but as a gift from my brother. It is a bottle that is just sweet enough for my taste and can be drunk without disturbing the meal. I had a bottle of Yaegiku Natural 39 Year Old. The 11-year-old tasted like brandy with a lingering aftertaste, while the 39-year-old tasted like Shaoxing wine. I prefer the 11 year old, but I appreciate the rare opportunity to compare the two.

My brother prepares a sake for me under the theme of "sake you'll never drink again," Kume no I no Majuro, a brewery with a history of over 400 years that went out of business in March 2021, and I enjoy a soft, easy-drinking, precious cup of sake.

According to my brother, it is a rare sake that is not well known even in Ehime. Perhaps because it has been stored for a long time, it tastes more like brandy than sake. At first I was surprised at the difference from the sake I usually drink, but as I continued drinking, I realized that this was also possible. The Yoro Shuzo brewery was damaged by the torrential rain disaster in western Japan in 2018. Kano River is brewed by the fourth generation of the brewery, which was rebuilt with support from all over Japan through crowdfunding. The name "Kano River" refers to the "Kanogawa" area that runs through the Elk River in Ozu City, and this new sake is brewed with the hope that the wishes of those who drink it will come true. Purchased during a tour of Toko's sake brewery. It is the only plum wine in Japan to have won three plum wine competitions. It is soft on the palate and has a unique and distinctive aroma that lingers in the nose. Yet it has a robust flavor. It is moderately sweet and has a unique taste that is unlike anything you have ever had before, making it addictive. It is a unique flavor, so there may be different tastes. I prefer it on the rocks, but the staff at the store says it is also delicious with carbonated soda. I would like to pair the rest with cheese or cured ham.
