2021-8 Gutsy Honjozo It's easy to drink cold, but you can feel the tightness of the final finish. It's better to heat it up. When heated, it goes in easily and has a rich flavor. It's tasty and not unpleasant. On the third day, there's a popping sound of gas, and cold sake is delicious without the harshness of the first day. On the other hand, it's not so good when it's heated up. Warming it up is best. On the seventh day, it is even more angular and tastes like a ginjo-shu, with no lingering aftertaste, but a bitterness comes out on the tongue at the end. However, considering the price, it is quite excellent. When it is near room temperature, it becomes quite round or three-dimensional. It will be a definite repeat next year.
