Yume-no-Kou
Wadaya Hanpukai's February item, a limited edition light nigori.
It has a nice sharpness and little bitterness, but for some reason I didn't like it a bit. It has a grapefruit flavor? It may have some grapefruit flavor.
Purchased the third Kabashiko (Hippo Shiko) from Sansho on the first day of its release!
It is an ancient rice following Hozu and comes together with an aromatic, champagne-like elegance. Umami.
But personally I think I prefer Hozasu 🤔.
I was attracted by the word "Kinokan" and bought it. I couldn't tell the difference between it and regular kinokan, but it was distinctive for its light, gorgeous flavor and yogurt-like sweetness that gave it a fresh yeastiness.
I've had Hozasu's Go-No-Mozo, but this is my first time to try Shi-No-Mozo. The difference is that it is brewed in wooden vats. I couldn't tell the difference in taste, it was a little less cohesive... and the aroma was kind of...?
I honestly don't know, but it's still delicious 😋.
