A rare company trip nowadays. Another trip to Tohoku Miyagi. On the first day, we took the standard course from the ruins of Aoba Castle to Matsushima. Rainy Matsushima was also nice! Mutou Sake Shop was right in front of the hotel. When we took a peek, we found a lot of the best drinkers in Miyagi. After much deliberation, I decided to try this one. I thought that Wataya no Aki-Wata was Kawaguchi Natto, but they also have Yamada-Nishiki! We chose a sake from Kurihara, a mountainous area in spite of being in Matsushima, and it was the right choice. I brought it to the hotel banquet and enjoyed it with everyone. It was a perfect match for oysters grilled to culture and mezasu tempura. It is a classic Miyagi sake that goes down easy and is a perfect food sake.
Yamadanishiki, 55% polished rice
It has a gusto of umami flavor, but is not that much cottony.
This is easy to drink by itself!
This is the best Wataya in a long time. Sometimes the aftertaste is a bit spicy, but the balance of acidity and umami is excellent.
I wonder if it was this type of Wataya that first got me hooked.
It was a bit pricey...I bought it at Haku-san in Sendai.
Slightly sour taste. It has an austere taste like a veteran player.
When paired with fatty sashimi like tuna or salmon, the acidity and astringency lightens and rejuvenates. It has the feel of a newcomer and a seasoned player doing a good job!
Kawaguchi natto (fermented soybeans)
A good sense of maturity. Jinzari kara san. It's from three different types of natto. It is very solid. 86 points
Sweetness: 2.7
Sourness:3.3
Dryness:3.2
Hinted aroma: 2.5
I drank it for the first time.
It seems that Miyamanishiki was the rice used for Kawaguchi Natto, which I drank 7 years ago. This time I chose the sake with a yellow label.
It was delicious, with a soft and smooth mouthfeel and a delicious flavor with a hint of sourness. The wife commented that the aroma that went down her throat was the same as the usual rice she eats every day, Sasanishiki. Naturally, it went well with the meal.
Kawaguchi Natto" at the natto counter has six kinds of natto, the yellow one is ground natto.
In-den after a long time!
It is yellowish in color.
It is a little sour, but has a heavy spiciness.
But it's so dry and refreshing when you have a snack...
