Mikotsuru Suwa Miyamanishiki Junmai Ginjo Hi-ire
Purchased after being allowed to compare a draft and a hi-ire at a department store tasting held at the brewery's store.
I was convinced that the raw version was definitely better, but to my surprise, I preferred the fire-brewed version.
The brewer told me that the reason for this is because they use advanced technology to do the hi-yoke process.
I see, that makes a lot of sense.
It is light and refreshing, but has a deep sweetness and umami base, with a hint of bitterness and spiciness that comes through beautifully later, making it extremely delicious.
The only sake brewery in Shimosuwa. I wondered why the manufacturer was a transportation company in Fukushima, and was told that it was because the business was once closed down and then revived through succession.
Unlike what I imagined from the label and the "dry" name, the taste on the palate is sweet and sour with a mellow apple flavor. The aftertaste is dry and spicy with a sharpness and a gassy feeling on the tip of the tongue. This is delicious.
This time we had a mini-bottle due to the time we spent there, but next time I'd like to take my time to select a bottle of No. 4.

Continuing from last weekend's sake brewery tour with my drinking buddies 🎶🍶🍶I enjoyed the activated nigori❄ from Mikotsuru at a restaurant I used to frequent with these buddies 🎶🤤 so I decided to visit this brewery and try some 🎶🍶.
We started with Yamae Nishiki.
The aroma is not quite as floral as it should be, but it has a fruity ginjo aroma 😆✨️
The taste is quite rich, sweet and juicy, and the mouth is full of umami.
Next, Hitogokochi!
The aroma is also a fruity ginjo aroma 😆✨️
The taste in the mouth is elegant and fruity 🎶🎶.
Finally, Yamadanishiki
The aroma is a fruity ginjo aroma this time ~✨️
In the mouth, it is like a combination of Yamanishiki and Hitogokochi 🎶.
🎶Mikotsuru really is delicious 💕🤤And now I have another favorite 💕Of the three, Yamae Nishiki is my personal favorite 🎶😉😉.
In case you're wondering, I bought the active nigori (lucky I was the last one left 🎶) and the unfiltered raw unadulterated Yamae-nishiki, which is limited to the brewery 🎶🍶.

It has a ripe, sweet aroma of apples and melons, with an elegant taste of sweetness and acidity. I felt a sense of gas and a little bitterness in the second half. It is juicy sweet and delicious.

No habit, but refreshing.
