Nice to meet you! I was wondering if I should try the Junmai Hiyoroshi.
I was hesitating between this and Junmai Hiyoroshi, but the waiter advised me to choose this one as it is more dry!
Almost 90% of Souhyo is brewed and consumed in Tochigi prefecture, and it is a Tochigi sake that is loved by the locals!
After opening the bottle, the aroma was mild ginjo aroma 🥰 Not gorgeous, but almost no harshness, and a promising aroma!
The spiciness rushes in from the soft texture in the mouth, but the taste is mellow in spite of the spiciness! You have to try it to understand.
It was easier to drink on the second day than right after opening the bottle.

I'm going on an overnight company trip to Hokkaido starting today, 10/25: ✈️ I thought about staying an extra night but decided against it because I have something to do on Sunday 😅Today's dinner is at a beer garden so I'll have a relatively free night so I'm thinking of going to a sake bar 🤤 I wonder if there is one around the Susukino area 🤔If you have any recommendations for places around Sapporo station. Yes it was round and dry... I tend to buy rare sake or sake that I am used to drinking, but once again, when I come across an unfamiliar sake, I have to try it! It was one of those sakes that makes me think, "I've got to try it!
It has a full flavor of rice that has increased with maturity, just like hiyaoroshi sake, and the acidity unique to sake brewed with sake yeast is simply delicious. It is perfect as a food sake, and since it requires refrigeration, we drank it cold, but it would also be delicious lukewarm.
My daughter bought a choko as a souvenir from a school excursion at her elementary school.
The school trip was to Nikko, Tochigi Prefecture, and the design was of three monkeys (see no evil, speak no evil, hear no evil).
The sake was made by Sohyo, also from Tochigi prefecture.
We enjoyed our first heated sake 🍶♨️ this fall.
It is dry and limpid, just like my impression of Sohyo so far, but it also has a subtle umami of rice, and the acidity comes out when it is lukewarm at around 40℃.
A sake that can be enjoyed with food without worry.

I grew up in Niigata, but it was on Sadogashima. The generation a little older than mine was in Aizu Wakamatsu.
Sohyo is still a nice, calm sake👍.
Like the "New Junmai Sake" released in 2022 to commemorate the 150th anniversary, which is now a standardized product as a new al 13° product 🤗.
It is a light dry finish with no residual sugar or sweet-sourness due to its raw yeast brewing. The aroma is calm and slightly reminiscent of quince. Firm acidity characteristic of the sake's namahashime with a hint of fullness. The flavor was so delicate that it was almost light. The taste is so delicate that you may feel it is too thin.

I spotted this in the liquor section when I was grocery shopping 🤭The label with the classic typeface is cool. Light flavor? That's why it had a beautiful flavor that gently accompanies the meal without interfering with it 😌.

I googled it and found that it had an elegant melon-like aroma!
I think I was right 😃It was like the acidity at the end that made it sharp (maybe).
Next and last
On the way home from work, I suddenly felt like having a little drink. After a long time, I dropped in at Kanda Toyama. It was empty with only one customer in front of me. This is the first sake from the sake tasting set. It is soft to the taste, dry and crisp but not harsh. It is delicious.
