Spring sake has started to appear in the liquor stores, but it is still cold. Tonight is the first Suwaizumi from Tottori.
First, a cold sake. Quite different from the pretty label, it has an aged, rich flavor typical of San'in sake. It is delicious with little sweetness and a distinctive bitterness, but switch to hot sake after one drink.
It is plump, sweet and savory, like Shaoxing sake but with a sourness, and it is still better when heated. I was again surprised at how different it was from recent sake.

Gentle mouthfeel☺️ is refreshingly light ✨Citrus 🍊Needle. Pleasant, dry sharpness when combined with lotus root scissors fried. It's also sweet and tasty with the ponzu-like tuna brain.

It has a bold, straight and impressive flavor with a slight effervescence. It is a representative brand of Tottori or even San'in region. It has a versatile flavor that can be drunk all the time.

Warmed sake is wonderful. The sense of maturity and acidity is exquisite.

It is purchased at the direct store and Kajiya of the Suwa sake brewery that also appeared in "Natsuko's sake". The contrast between the illustration of Suwa-musume and the edamame (green soybeans) was just right, so I bought the label. The slightly low alcohol content does not interfere with the snacks, making it a versatile sake that goes well with edamame. Slightly dry
