Sake I met at a sake brewery tasting
I really liked the sake, which had a nice sweetness and a slight sparkle, while also having a delicious sake flavor!
I had it with motsu nabe, and of course it went well with it!
I am sure it would go well with western food as well.

Kumamoto Yeast
Yumachi, Okayama Prefecture
2024/02
Collaboration of Koyama Shoten and Kamishin Shuzo
Fresh, juicy and sweet with popping gas.
It is a clear and very carefully brewed Omachi 😋.
Sweet aroma, sweetened yogurt.
Contains a candy-like flavor.
Texture is soft.
It has a little gourd-like texture.
Softly sweet and full-bodied rice and koji swell.
It has a slight aroma.
It is delicious.
Degree of liking ☆4/5
Preference★☆☆☆☆
When I visited the restaurant for hiyayoroshi (grated yam) after the Bon Festival when it was still hot, I bought this recommended for a hot day.
The alcohol content is 13 degrees. It is smooth, refreshing, watery, and does not interfere with food. Neither sweet nor spicy is assertive, and the slight sweetness of the rice in the mouth and the gentle bitterness that comes afterward fade away quickly.
The brewery uses mineral-rich oyster shells to improve the soil, so I would like to try it with fried oysters with a squeeze of lemon.
The other day, Kaorin and I went to the Kinoshita Meishu Store, which is located near my house 😀.
When we were there, the brewer from Okayama Prefecture's Kamishin Sake Brewery was there and they were having a tasting event, so we both had a chance to try some 😀 We didn't get to meet him that day, but it seems that bouken-san was there as well 😀.
We didn't meet him that day, but it seems that bouken-san was there too 😀.
Although it was different from the sake Bouken-san chose that day, Kaorin seemed to like this nigori, so we took it home 😀.
According to Kaorin, this sake tastes like summer orange liqueur with soda 😇.
Good evening, Mr. Yasube.
I was so confused about this one that I gave up on buying it 😅
Yoohee-san bought this sake at a different store 😁.
Oh, I'll get angry if I spoil it 🤣.
Good morning, Yasbay 😃.
I think the label and the appearance of this sake makes it look like it is a solid type of alcohol 😅 but in fact it has a summer orange 🍊 and a rummy feel to it. Hi bouken 😀
Kabishin's tasting had a pretty good selection of sake 😇.
I also had a hard time deciding between the sake that bouken-san got and this one, but Kaorin's choice was this one😇!
Hi Yoohee 😀
I was able to open the bottle safely, but it had a pretty strong schwarziness and acidity, so I think it was a Kaolin style expression of summer orange liqueur with soda 🤣.
Hi Jay & Nobby 😀
I found it to be a very nice sake that has the nuances of a solid sake, but also has a cider-like taste and fruit-derived acidity 😇.
I'm sure Kabishin has a lot of delicious sakes 😀.
Hi Yasbaye 🐦.
I haven't had Kabishin sake yet 🤭I would like to try the Natsumikan liqueur with soda because it's my favorite taste 😆.
There are a lot of good sake in Okayama ❣️
Good evening, Pon-chan 😀
I'm sorry for the bad analogy. I'd like to say for your honor, I think the soda with summer tangerine liqueur is just an example of the schwarziness and fruity sourness... sorry for the poor analogy 🙇.
But it's delicious!
Tasted and purchased at a tasting at Kinoshita Meishakuten
Rice: 17% Omachi for Koji rice, 83% Akebono for Kakemono rice
As I wrote in my post about the tasting, satoumi rice is rice made with oyster shells as fertilizer.
Sweet and juicy with a hint of pineapple 🍍.
There is a bit of bitterness at the end, but I highly recommend this sake for those who like sweet and tasty!
Much better impression than when I tasted it.
Very sweet and tasty 😋.
The day after the Gifu event, I went to Kinoshita Meishu Store to pick up some sake.
When I got there, Kabishin Sake Brewery was having a tasting event and I drank a lot of sake!
I drank
Shinshin Junmai Ginjo Bottle Enclosure
Polishing ratio 55% Akebono
The rice is made from oyster shells as fertilizer.
The impression is that it is a mild yet umami (flavorful) sake.
I did not feel any pungency or sake-like sensation.
Shinshin Junmai Sake Jikoujyo
Polishing ratio 70% Omachi
It was delicious with juicy flavor.
Shinshin Junmai Ginjo Unfiltered Nama-shu
Polishing ratio 58% Yumachi, Akebono
Sweet, juicy, juicy, and very tasty. Buy this one 😋.
Kamishin Junmai Daiginjo Yamadanishiki
Polishing ratio 40
Mild but elegant ginjo aroma and flavor compared to the previous junmai ginjo.
Muscat no Kokochi
Polishing ratio 70% Japanese rice
Original sake from Kinoshita Meishakuten. Alcohol 8 degrees.
It is like a juice without the sake feeling.
Shinshin fertility festival Junmai Ginjyo Unfiltered Nama Nigori Sake
Polishing ratio 58% Akebono
It was delicious with a refreshing sweet taste.
I hesitated to drink it, but there was too much activity in the refrigerator at home, so I gave it up.
I bought Junmai Ginjyo Unfiltered Nama-Nagorizake and Midsummer Fruits which were not on the tasting list 😋.
Hi bouken 😀
Kinoshita-san is next to my nearest station so I went there too 😀.
The muscat was particularly memorable, but I ended up bringing back a good brewing prayer festival 😀.
I was able to purchase that sake again too 😀.
Good evening, Mr. Yasubeyesan.
I was not sure about the fertility festival, but I bought it because the brewer said it was the best midsummer fruit without tasting it 🤣Yasbaye, you got that sake too 😁.
The recent heat made me want a summer drink, so I bought it at my favorite liquor store for the first time in a while!
It was delicious with a fresh taste and a little bit of pizzazz 😆.
Seasonal sake is still delicious too 😆 ☀️
