The aroma is a combination of ripe melon, floral, and slightly peachy sweet aromas. The mouthfeel is sweet on the palate, but due to the sake being unpasteurized, it has a strong sense of sharp alcohol with a shrieking, fizzy feeling. It also has a good amount of umami, acidity, and bitterness. I enjoyed it on both Saturday and Sunday, but I preferred the mellower flavor after a day of drinking rather than freshly opened. Thank you very much!
I went to a liquor store in search of a dry sake, as I had been drinking a lot of sweet sake lately....
However, the rarity of Hakuto yeast and the words of the producer on the label led me to choose a sake that looked sweet and sweet.
When I tried it, it tasted really sweet and fruity. LOL.
It has just the right amount of acidity and is full-bodied sweet, but not sweet.
The alcohol content is 16.5, which is not low, but it is soft and light, so the cup goes on and on. This might be a sake to make you drunk....
It is delicious. I am glad I bought it.
