Sake from Kochi that I was curious about

There was another type of sweet sake, but I chose the Tokujun over the Junmai Daiginjo.
It was a good choice. It was Kochi and refreshing, but it was dry and good with umami and sweetness.
Not too Kochi, not too sweet, I would like to try many kinds of sake.

I think I bought sake everywhere during GW, but I bought this one at a place in Saitama for the first time. The label caught my eye, so I bought it.
It has a nice ginjo aroma and an ama-like taste, followed by a bitter or astringent taste. After the moderate ginjo aroma and ama-ama feeling, a bitterness or astringency followed. I thought that this pattern might not be so common. It may be an addictive taste.

Today, the first day of the event, Kawazawa Sake Brewery, the newest brewery in Kochi, was here for tasting and sales.
The toji (master brewer) of this brewery has 20 years of sake brewing experience at Kameizumi Sake Brewery.
I had a chance to taste the whole range of their sake, which is generally less sweet and more refreshing than Kameizumi cel's. 🙆♂️
This time, I bought this limited edition sake that suited my taste.
