Xuyama Shuppan is famous among Fukuoka's sake shops for its warmed sake, especially for its hot sake! Start with hiya! The aroma is subdued. Light at first, but the rice flavor gradually spreads. The taste is calm and gentle, with a good roundness. When heated up, the acidity is in full swing. It's been a while since I drank a hiyaoroshi with matured umami.
