This time it is a bear tokkuri from Tamasakura. It is also a very attractive H29BY pure rice sake, "Gohyakumangoku", I was aiming to use it as a cup of sake! It's a sin to use a cup of sake Yuyuu Kanken-Yuyu as a cup of sake. I'm so excited to remove the crown with a corkscrew, isn't it ⤴︎? After opening the bottle, I immediately started to warm up the hot spring ♨️ Oh, I forgot to drink it at room temperature 😅😅. The color is lighter than the picture. The aroma is sweet, sour, spicy, and bitter. It also smells like soy sauce and shiitake mushrooms. The taste is like soup stock with a wild acidity and bitterness that is assertive and sharp. The contrast between the rich umami and bitterness is irresistible. The bitterness is a little more assertive than the impression of the cute little bear in the Yuyuyuukankan, but the flavor of the heated sake that brings out the broth-like umami is still 👍! I had a R2BY of the same sake at the end of winter, but the H28BY is more mellow and looks good when heated with water. TAMA-Sakura is so good! I think I could see a little bit of difference between breweries after my trip to San-in area in GW. But it's still too deep, I have to go back 💨. Here's a quick shot with the Tokkuri that contained the Ten Rising Sun's Gohyakumangoku, which I emptied earlier 📷✨. Now I have two more tokkuri as my favorites and my heated sake time is enhanced😊🍶♨️

Goyumangoku 28by Darkly colored. Yamabuki, yellow. Aroma of maturity but also freshness. Ripe fruit, banana, a little citrus. Tea-like notes and caramel remind of the complexity of maturity. It is recommended to be served warmed because it is a Tamasakura, but it is well-balanced even at room temperature. The sweetness is the main component, with a good amount of acidity and a pleasant bitterness at the end. There is a slight sweetness in the aftertaste as well, giving it a rich flavor. Warm it up. It is delicious! The volume of umami and sweetness increases dramatically, creating a rich flavor that spreads through the body. It has a fresh image, while still being voluminous and tasty. I wondered if it would be good at room temperature. I thought it could be served at room temperature, but I think it should be heated. It's amazing! It doesn't have a huge impact, but it tastes great. I can't get enough of it. I want to drink it every day!

Sake recommended for warming up 29BY So we served it warmed. The aroma is complex, with hints of honey and spice. In the mouth, it is soft and smooth. Weak sweetness and umami Sourness and bitterness come through at once. The impression is quite dry. The lingering aroma of hay is refreshing.

Shimane Prefecture, Ochi County. Tamakura Sake Brewery Co. Tamasakura, Yuyu-Yu-Kan-Yu. Since it is the season of cherry blossoms, it is Tamasakura🌸. First, it is served a little cold. The color is clearly yellowish. The top aroma is highly volatile, like magic ink. I thought it was bitter chocolate and almond-like and had a sense of maturity, so I looked online and found that it is aged and shipped unfiltered. The dark flavor and tangy pungency mix and assert themselves, and there is little sense of unity. I will drink it warmed. When heated to 45 degrees Celsius, the flavor was so rich and delicious that it almost made me think it was dashi. The flavor is so rich that you'd think it was dashi (Japanese soup stock), and the almondiness is still there, but it's mildly spicy and sharp. The aftertaste is tightened and integrated with the sourness and spiciness. Ingredients: rice (domestic), rice malt (domestic) Rice polishing ratio:70%. Alcohol content:15
