At a cool music bar with a DJ booth, we were served a selection of sake selected by the owner, who knows sake inside and out.
This was also a brand new to me. It has the color, taste, and aroma of heated sake, with a strong lactic acid aroma and taste, followed by the umami sweetness of Yamadanishiki.
We enjoyed it with miso-flavored and smoked dishes.

A bottle of Gohyakumangoku with a sake degree of ➕8. The rice and koji are from Shimane. I have been curious about this Shimane sake for a while. I was told that heating sake is recommended, but I still drink it cold, so I'm going to drink it cold again. The description at the liquor store where I bought it said it was "melon-like," but personally, I couldn't detect a single millimeter of that. I don't mean that it's good or bad, but just that I felt it that way. I was satisfied this time because it was exactly what I expected before drinking it, a hard liquor. Let's take our time and drink it slowly.
It is said to be a new product released this year.
