I've had many different kinds of sake, but there was a time when I stopped looking for new ones and just drank the ones I liked.
Some of the breweries have stopped making sake or made it difficult to find, but one of the sake I used to drink a lot back then was this Hibokuizumi.
It's been five years since I last had this sake, but it reminded me of my own tastes and flavors.
For a change of pace, we went to a standing bar 🍶🎵.

I was able to obtain this year's summer sake, Ichibi.
It has a good umami taste and a nice aroma on the nose.
Although it is Ichibiki, you can also enjoy a sense of effervescence.

Refreshing aroma, fruity sweetness, and a freshness that makes you feel as if you are drinking directly from the brewing vat.
Milky and gentle acidity give a good impression.
The lingering aftertaste is very clear because it is too sharp while the umami of rice can be felt firmly.
It is not too sweet, so it goes very well with food.
