The dry type of Kiri-Tsukuba has been my favorite since I bought it in Tsukuba last year at this time of the year.
It has a melon-like sweetness on the palate, but at the same time it is firm, crisp, dry, and bitter. The perfect balance of this melon-like sweetness and dryness is what makes this sake so appealing.
I bought this sake at Sakepo Osonoe Shoten when I visited Oarai. This store mainly stocks sake from Ibaraki, and while it is very nice to have a place where you can buy sake from various places, I wonder if this is more appropriate for a local sake shop (not that Ibaraki is the only place to buy sake). I also bought a glass. I will drink Ibaraki sake in this way from now on. Maybe.
It has a slightly modern, yet refreshing taste, and I think it is better suited for a mealtime drink than as a stand-alone drink. I thought it went well with the mozzarella cheese I somehow bought. I would like to try the Urasato one next time.

A test brew of a new rose yeast collected from roses in Ibaraki Prefecture🍶.
Misty nigori with well-mixed tailings.
Very nice aroma of sweet melon and banana, with powdery nuances and sweet and sour notes of koji.
Good sweet and refreshing aroma with a melon soda feel, with an occasional fresh greenness of melon.
The texture is rounded, and the entrance is dry and refreshingly acidic, spreading pleasantly with a gas shriek.
There is a mellow sweetness and umami, and a tight bitterness added to the overall taste, giving it a pear-like sensation 🍐.
There is also a freshness of blue melon sensation in the hint of aroma, while the chirichiri of gas and acidity are crisp as it goes through.
The lingering finish is medium, leaving a bitter astringency on the tongue.

The taste is similar to Kirizukuba's first pressing light nigori, but Blue Rose is more bitter on the palate and the aroma is gorgeous and sweet.
The clean, tight, refreshing pear-like mouthfeel with a gorgeous aroma makes it more gorgeous. ☺️
By the way, this sake also has brewing alcohol added, but you can almost never tell unless you are told😳.
It's a wonderful two-flower sake, and I got to add a little GW flair to it 🥀🌹.

I thought the two bottles would be similar as they both have the same toji, same rice and yeast from roses, but they were totally different 😳.

My GW Sake (1)
Junmai Daiginjo made from rice Milky Queen, brewed with Princess Michiko's rose yeast.
The fruity aroma of sour pineapple and ripe melon is covered with a fine, chile-like acidity with perfumed powdery nuances.
There are also raw material aromas like rice before polishing and white dumplings.
The texture is round and round.
The sweetness is understated and fine, with an elegant bitterness. The acidity with a spectacular chirichiri-feeling spreads in the mouth and passes from the back of the throat to the nose, where it finishes.
The lingering aftertaste is long.
Leaves a light astringency on the tongue.
As the temperature rises, the intensity of the sweetness increases, and it has an interesting balance that harmonizes with the bitterness and core acidity.
It is strange that the bitterness does not remain after swallowing, even though it is rather bitter when the sake is contained.
When the bottle was first opened, it had a slightly peculiar bitterness, but on the fourth day after opening, when the bottle was cooled down, the bitterness and difficulty in drinking subsided and the balance of the flavors came together at a high level, making it very good. ☺️
The image that came to mind as I sipped the wine was as if I was drinking a perfume.

I think the label of Princess Michiko of Sakura Sho is a very good effort because most of Urasato Brewery's sake, both Kirizukuba and Urasato, have unfashionable labels like the brand name in Kanji characters 😁.

This is a new sake from Kiri-Tsukuba, released last December.
Kiri-Tsukuba is the main brand of Urasato Shuzo Brewery.
The brewmaster is Mr. Chikara Urasato, so there is no doubt about it.
The sake is made from Gohyakumangoku grown under contract by the farmer whose name is listed on the front etiquette, brewed with Ogawa yeast, and bottled lightly cloudy at the tank pressing.
The bottle is opened with a sip!
When poured, it has a strong gassy feeling and bubbles rise 🫧.
Mist white with yellow and gray tints.
The aroma is fresh pear and banana, with a hint of sourness.
Volatile aroma of isoamyl alcohol is faint.
The aroma is similar to Urasato Usunigori 2.
The taste is very refreshing.
From the stimulation of strong and coarse gassiness, it is quickly quenched by a refreshing sweet umami taste and light acidity with a hint of koji malt.
The aftertaste is short, and as the temperature rises, it is mixed with a bitterness that is typical of sake lees.
The sweetness and umami are less pronounced than those of Urasato, and the flavor is simpler.
I thought so before, but there is no alsophilic feeling at all except that it is refreshing, and you really can't tell unless you are told 😳.
It has a moderate aroma and a refreshing taste, and it goes down smoothly without a hitch.
Too easy to drink but delicious 🍶.
I like Urasato, but Kirizukuba is also delicious 😊.

I went to Tsukuba for the first time in a long time and bought Fog Tsukuba.
It was refreshing and not too sweet, but it had a slight banana-like sweetness peculiar to Ogawa yeast.
