Today's sake is Enryu Junmai from Shizenigo. I drink this sake quite often this time of year. I was deeply moved that this sake won a gold medal at the Saké Competition 2025.
The aroma is of apples and peaches, but less so, with a hint of rice. When you drink it, it has sweetness and a slight carbonation. The umami flavor is firm and expands from there, and then there is a hint of bitterness, which slowly fades away along with the beautiful sweetness and umami flavor. It leaves a delicious aftertaste. After a little time, it becomes mellower and more delicious. It is not flashy, but it has a delicious flavor that can be savored slowly.
