This time it is Himonora.
It is a sake made by Hakuin Masamune of Numazu City, Shizuoka Prefecture,
It is a sake made to go with Numazu's dried fish.
I have been looking for a chance to capture this sake ever since I first encountered it at Sake-no-wa 🎣.
The impact of Himonora, a taste-confirming creature that even my roommates, who are not interested in sake, were attracted to.
Various goods are also of interest.
It is served at room temperature.
The color is a light yellow.
The initial aroma is of sweet malted rice and raisins.
It has a mild mouthfeel, and the first impression is clean and dry.
The raisin-like sweet and sour taste runs through lightly, and the umami flavor flows like a veil over the tongue and disappears with the astringent taste.
Warm it up.
The contrast between the rice and the sharp bitterness makes for a nice heated sake that is easy to drink.
It has a light, matured feel to it, and I prefer to drink it hot or cold.
Himonora (who happened to be at home)

Year-end drinking with childhood friends at a liquor store 🍺.
We had a drink at a long-established soba (buckwheat noodle) izakaya (Japanese style bar) in Fuji.
It was my first time to drink at Hakuin.
It is easy to drink and has an old-fashioned taste that does not go out of style. It is dry but gentle to drink.
This year has been busy but steady. I was hospitalized and was able to put my worries behind me. There were some upsetting things at the end of the year, but let's put those things behind us and refresh our spirits in the new year 😁.
