I received this on a business trip to Toyama.
It is a junmai sake from Takazawa Sake Brewery in Himi City.
It was a delicious sake with a delicious rice flavor and aroma typical of junmai sake.
Junmai Namaishu🍶Akebono🌅Oyoyo Flag🇯🇵Ihyakumangoku from Toyama Prefecture🌾.
Jujo Hashigozake from Kitakata Ramen😆Entered the famous restaurant Saito Shaba. First, reset with a beer 🍺 and then this one. It's sharp and sharp ✨. The label is wrapped in plastic wrap to prevent it from peeling off, which is kind of funny 😅.
Popular bar Saito @ Jujo 20240106
The brewery is located in Toyama Prefecture, but it seems to have been severely damaged, so we drank and cheered.
Rice is Shunyo and Yuyamanishiki.
Yeast: Kanazawa yeast
Muscat flavor common to sake made with Shunyo. Slightly white wine-like 🤔.
I felt the slightly stronger bitterness and alu-ness at the end accented the taste.
Good evening, bouken😄.
I like your support by drinking 👍.
I've never seen a sake with koji rice Oyamanishiki and kake rice Shunyo 😳.
I haven't smelled 4MP of Shunyo sake for a long time, so I can't wait to open my long-stored Yamazan no Kotobuki Freaks 2 😌.
Good morning Aladdin 😃
I had an image of 4MP alcohol as low alcohol, but this one is 17 degrees, so it's fresh and bold 😊.
Freaks 2 has been on my mind for a while too 😁.
Toyama, Himi city. Takazawa Sake Brewery Co.
Ariiso Junmai-shu Akebono Hatsuarashi
This sake brewery in Toyama was hit by the earthquake on New Year's Day.
After all, drink and support!
We will drink it cold.
The color is clear with a slight yellowish tinge.
The aroma is mild and slightly apple-like.
The mouthfeel is gentle, and the wine stays in the mouth for a short time before slipping down the throat.
The texture is hard and minerally.
Very refreshing!
After swallowing, the aroma that wafts through the nose is slightly sweet and enhances the rich, robust flavor.
The aftertaste is also moderately tightened by a gentle acidity, and the aftertaste is also refreshing.
There is a slight spiciness afterward, but it is not harsh.
It is also delicious.
I wish you the best of luck in rebuilding your brewery 🙏✨.

Today's sake is also a continuation of yesterday's sake, Ariiso Akebono, which survived the earthquake in Himi 😀 Yesterday's was a draft sake, but today it is a fire-brewed junmai-shu.
Yesterday it was a draft, but today it is a fire-aged junmai sake 😀.
Of course, we will be comparing the two sakes we opened yesterday, Ariiso Akebono and Nitoshi 😀.
Kaorin is separated from us again today, so we started the laboratory with 3 bottles side by side 😀.
With a wife, you can't play this kind of game very often 🤣.
At first I had them in hiya 😀.
As I thought, I liked the Ni-Utsuri's raw taste the best because it has a firm sweetness and umami flavor 😀.
The taste of Aiso Akebono was almost the same between the raw and the hiya 😀.
Then...I roasted 3 bottles at once in hot water up to 40 degrees Celsius 😀.
Unfortunately, Ni-Rabbit... I knew before I tried it but the taste was too chunky and the hiya was not sharp and tasty... Sorry for experimenting just because I knew what I was doing: 🙇♀️
I'm sorry for the experiment, I just knew what I was getting into........
However, the raw one was getting a bit sour, so today's Ariiso Akebono was the best when it was heated 😀.
This heated sake was delicious and I really hope the brewery will revive it soon 🙏.
Good evening, Yasbaye 🦉.
Great job on the sake you worked so hard on Nanao 😳and the lab continues 😆 I'm glad it tastes so good heated up 😊I hope it was worth the experiment 😁 and that you can revive it 🙏.
Good evening, Yasube 😃Kaorin continue to take care of yourself 😌.
Drinking Ariiso Akebono and cheering for it, good for you. ☺️ It's also very interesting how the flavor opens up differently when heated up between the raw and the heated versions 😊The two hares...everything is a challenge 😁.
Mr. Yasube.
Good morning...
I love the sake lab 🤣
It's a little bit luxurious to compare sake, isn't it?
And it's not easy to open 3 kinds of sake at the same time!
Hi Pon 😀
Sorry...I made a mistake😅
Akebono is in Himi city, not Nanao 🙏.
We are neighbors though 🤣.
I have little experience with heating sake, but it was still the best heated sake I've ever had!
Aladdin, thank you for your concern 😀.
I'm a little more than happy to say that I finally managed to go a day without a fever 😀.
I really felt bad for Ni-rabbit because I knew that before the experiment 😅.
I'll make sure I end up with a proper hiya.
Mr. Yasube. Excuse me here as well. Yes, that's right. I think many small warehouses are structurally vulnerable to earthquakes. Himi, Niigata-Kashiwazaki, etc. also suffered damage. I hope everyone will come back!
WOM, thank you too 😀.
I was impressed by the sake that survived amidst so much damage, most of it ruined 😀.
I hope all the sake breweries will come back 😀.
Himi City, Toyama Prefecture
The tragic Hokuriku earthquake has focused on Ishikawa prefecture, but Himi city in Toyama prefecture was also severely damaged 😭.
This bottle is said to be one of the few remaining sake bottles from a brewery in Himi city where most of the bottles were broken 😅.
It's a bottle with a lot of vitality 😀.
I had it cold first, and this sake is unmistakably mellow 😀.
Then we compared it with Fusashimaya's light nigorigo which we opened yesterday 😀 We drank it both hiya and lukewarm.
The table top looked like a laboratory, but it turned out to be a delicious drinking comparison 😀.
We were especially surprised at the change in taste of Ariiso Akebono's sake when it was heated from cold to warmed up 😀.
It's tough when the wife is down, but it's fun to experiment with different types of sake 🤣.
Thank you all for your kind words of sympathy😊It's only the second day, so it's hard to get rid of the fever and I'm feeling lazy, but it's definitely better than yesterday. My husband is giving me a lot of trouble, but I'm glad to hear he's enjoying himself in his own way.
Kaorin-san, good evening 🌙I hope your symptoms have gradually calmed down. But for now, take it easy and rest, and when you are fully recovered, please enjoy the rest as much as you can 💪😊.
Good morning, Yasbay 😃.
Drinking comparison of temperature changes in the lab! Sounds fun 😋.
Kaorin, I hope the fever 🤒 goes down first 😌 so that you can make a full recovery quickly and we can both enjoy a good drink 😊.
Hi Yasbay 🐦.
It's like a laboratory 😁I also do whatever I want when I'm alone🤣I can't stop this 😆.
Kaorin, I'm sorry about your fever 🥺I hope you feel better and the laboratory becomes your normal table 🙏.
Thank you for your concern, Hirupeko 😀.
The fever was 38 degrees on Saturday and Sunday, but it seems to have gone down to less than 7 degrees this morning 😀.
I hope it doesn't spread to me 🤣.
Thank you for your concern, Jay & Nobby 😀
I am relieved to hear that the fever is slowly coming down 😀.
While I'm at it, I'm going to try a lot of temperature experiments in my secret lab 😀.
Thanks for your concern, Pon-chan 😀
I am relieved that Kaorin's fever seems to be over 😀.
I think I can continue this laboratory life for a few more days, so I'll try some things while I'm still here 😀.
