Today's sake is also a continuation of yesterday's sake, Ariiso Akebono, which survived the earthquake in Himi 😀 Yesterday's was a draft sake, but today it is a fire-brewed junmai-shu.
Yesterday it was a draft, but today it is a fire-aged junmai sake 😀.
Of course, we will be comparing the two sakes we opened yesterday, Ariiso Akebono and Nitoshi 😀.
Kaorin is separated from us again today, so we started the laboratory with 3 bottles side by side 😀.
With a wife, you can't play this kind of game very often 🤣.
At first I had them in hiya 😀.
As I thought, I liked the Ni-Utsuri's raw taste the best because it has a firm sweetness and umami flavor 😀.
The taste of Aiso Akebono was almost the same between the raw and the hiya 😀.
Then...I roasted 3 bottles at once in hot water up to 40 degrees Celsius 😀.
Unfortunately, Ni-Rabbit... I knew before I tried it but the taste was too chunky and the hiya was not sharp and tasty... Sorry for experimenting just because I knew what I was doing: 🙇♀️
I'm sorry for the experiment, I just knew what I was getting into........
However, the raw one was getting a bit sour, so today's Ariiso Akebono was the best when it was heated 😀.
This heated sake was delicious and I really hope the brewery will revive it soon 🙏.
Good evening, Yasbaye 🦉.
Great job on the sake you worked so hard on Nanao 😳and the lab continues 😆 I'm glad it tastes so good heated up 😊I hope it was worth the experiment 😁 and that you can revive it 🙏.
Good evening, Yasube 😃Kaorin continue to take care of yourself 😌.
Drinking Ariiso Akebono and cheering for it, good for you. ☺️ It's also very interesting how the flavor opens up differently when heated up between the raw and the heated versions 😊The two hares...everything is a challenge 😁.
Mr. Yasube.
Good morning...
I love the sake lab 🤣
It's a little bit luxurious to compare sake, isn't it?
And it's not easy to open 3 kinds of sake at the same time!
Hi Pon 😀
Sorry...I made a mistake😅
Akebono is in Himi city, not Nanao 🙏.
We are neighbors though 🤣.
I have little experience with heating sake, but it was still the best heated sake I've ever had!
Aladdin, thank you for your concern 😀.
I'm a little more than happy to say that I finally managed to go a day without a fever 😀.
I really felt bad for Ni-rabbit because I knew that before the experiment 😅.
I'll make sure I end up with a proper hiya.
Mr. Yasube. Excuse me here as well. Yes, that's right. I think many small warehouses are structurally vulnerable to earthquakes. Himi, Niigata-Kashiwazaki, etc. also suffered damage. I hope everyone will come back!
WOM, thank you too 😀.
I was impressed by the sake that survived amidst so much damage, most of it ruined 😀.
I hope all the sake breweries will come back 😀.
Himi City, Toyama Prefecture
The tragic Hokuriku earthquake has focused on Ishikawa prefecture, but Himi city in Toyama prefecture was also severely damaged 😭.
This bottle is said to be one of the few remaining sake bottles from a brewery in Himi city where most of the bottles were broken 😅.
It's a bottle with a lot of vitality 😀.
I had it cold first, and this sake is unmistakably mellow 😀.
Then we compared it with Fusashimaya's light nigorigo which we opened yesterday 😀 We drank it both hiya and lukewarm.
The table top looked like a laboratory, but it turned out to be a delicious drinking comparison 😀.
We were especially surprised at the change in taste of Ariiso Akebono's sake when it was heated from cold to warmed up 😀.
It's tough when the wife is down, but it's fun to experiment with different types of sake 🤣.
Thank you all for your kind words of sympathy😊It's only the second day, so it's hard to get rid of the fever and I'm feeling lazy, but it's definitely better than yesterday. My husband is giving me a lot of trouble, but I'm glad to hear he's enjoying himself in his own way.
Kaorin-san, good evening 🌙I hope your symptoms have gradually calmed down. But for now, take it easy and rest, and when you are fully recovered, please enjoy the rest as much as you can 💪😊.
Good morning, Yasbay 😃.
Drinking comparison of temperature changes in the lab! Sounds fun 😋.
Kaorin, I hope the fever 🤒 goes down first 😌 so that you can make a full recovery quickly and we can both enjoy a good drink 😊.
Hi Yasbay 🐦.
It's like a laboratory 😁I also do whatever I want when I'm alone🤣I can't stop this 😆.
Kaorin, I'm sorry about your fever 🥺I hope you feel better and the laboratory becomes your normal table 🙏.
Thank you for your concern, Hirupeko 😀.
The fever was 38 degrees on Saturday and Sunday, but it seems to have gone down to less than 7 degrees this morning 😀.
I hope it doesn't spread to me 🤣.
Thank you for your concern, Jay & Nobby 😀
I am relieved to hear that the fever is slowly coming down 😀.
While I'm at it, I'm going to try a lot of temperature experiments in my secret lab 😀.
Thanks for your concern, Pon-chan 😀
I am relieved that Kaorin's fever seems to be over 😀.
I think I can continue this laboratory life for a few more days, so I'll try some things while I'm still here 😀.
We pray that the brewery will be able to resume sake production as soon as possible. It is a dry sake with a strong rice flavor and a crisp, dry taste.
Mr. Karp-kun. Nice to meet you & good evening! The news reports are all about Noto, but Himi City was also quite damaged, and I will look for Takazawa Sake Brewery and hope that they will resume sake production as soon as possible.
Temperature Estimated 5°C
Taste 70%.
Color Orangey yellow
Nose: Not really my favorite, as it feels a little old-fashioned.
Taste: Like the aroma, it tastes a little like old sake, and is a little bit bitter. The aftertaste is sweet and sour like apples, which reduces the harshness.
Overall impression: It is not a sake that goes well with sake alone, but it is a good sake to drink while eating yakitori or other dishes.
There are Braille characters on the back of the bottle, but what are they?

My colleague at work said he was going on a business trip to Toyama Prefecture, so I asked him cutely and jokingly 🙇 to buy "Katsuma" for me if he found it, and he really went to the liquor store and asked, but of course it is not sold normally😅.
He felt bad and bought me this one instead, saying it is a sake that is not sold outside of his hometown 🥰.
I looked up the price to thank him, but it seems that the sales channel is not very wide, and it is not always available, but the price is reasonable for a junmai sake 😊.
But why not label it as junmai ginjo even though it has a 55% rice polishing ratio 🥹?
Now drink it cold as usual.
Yeah, it's like water💦‼️
I said this is a sake to be drunk warmed or at room temperature...so I warmed it up to lukewarm and it bloomed a little 🌸.
Personally, I prefer sakes that have a more umami rice flavor, but sakes that go down smoothly like this are also good sometimes 🥰.
I give Nabe-sama back to my co-workers👌
3KAN4ON, good evening 🌇It's a quintessence that you don't break the map painting beautifully even if it's a gift 😆 On the contrary, I'm happy to drink these totally unknown drinks👍.
Good evening 3KAN4ON ((˶ᐢ∇ᐢ˶)ฅ👒🌱
I got some Katsuma in Tochigi, but I didn't know it was a rare sake until then😅.
I guess you can't buy it there either 💦.
It might be nice to have a unique local sake as a souvenir: ☺️
Good evening, Mr. Manachy 🌆.
Map painting is a decision to leave it for a few months if it's buried 🥹.
It's nice to be able to enjoy drinks you would never buy yourself if they were given to you 😍.
Good evening, 3KAN4ON!
I think 3KAN4ON is a good person for both your colleague who buys you sake that you can't buy except locally instead of buying it and 3KAN4ON who returned the nabe-sama 😊It's a wonderful relationship 👍✨.
Good evening, Pon-chan!
He is a skinhead 👩🦲 and always wears a black suit and looks like a yafatza, but he is a very kind coworker with a very gentle way of speaking and personality😍.
I was wondering if I could buy him some more rare sake 💦 if I sent him a potsherd.
Good morning, 3KAN4ON 😃.
Yesterday, we also had a sake that felt like water! We also tried to imitate it and heated it up 🍶 and it turned out to be very tasty 🤗.

Impression・・It was not my favorite at first with cold sake. Now I drink it cold and it's delicious.
Rare type with only 240 bottles produced.
It is sweet and has a refreshing muscat aroma.
It has a refreshing taste and a sweet and tasty sensation.
It has a crisp acidity and leaves a refreshing
It has a crisp acidity and leaves a refreshing white wine-like feeling after the sweet and tasty sensation.
It is a sake with a unique image.
It was delicious. I will repeat again.
As the name Akebono suggests, Toyama sake with a distinctive sunrise label.
This is a sake from Himi City, famous for its cold yellowtail,
It is a dry brand of sake from the sea, but the fruity taste of Junmai Daiginjo adds a nice salty flavor.
When it is cooled down to a crisp, the fruity flavor stands out and the spiciness comes later, and when it comes to room temperature, the spiciness becomes more noticeable.
I had it with hot tofu and spinach with sesame paste as a side dish✨.

The label is cute.
The aroma is modest and gradually sweet, and the finish is clean and refreshing with a touch of sourness. It tastes like it would go well with sashimi.

Today we had a farewell party for one of my seniors at work who came from Tokyo to support us 🥩🔥 and while we were eating, we got an earthquake alert😱 There were 7 of us and 14 company and personal cell phones started ringing at once😰 The shaking was not serious so it was a relief 😮💨 but.., Alerts always surprise me 😵.
I'm always surprised by alerts 🤵🤵 After coming home, today I had my first glass of Akebono sake from Himi, Toyama Prefecture😃The aroma is mild🤔It seems to have a little bit of gas 😊It has a good balance of rich flavor and firm acidity 😚👍The taste is robust and lingering, and you can really taste it 😘This is a delicious sake 😘. It is a delicious sake 🥳.
Good evening, Maechen.
I'm sure you'll be surprised and sober when you hear the alert 💦 but I'm really glad it wasn't a big quake 🙏.
I'm sure you'll have a nice drink at home 😊👍
Good morning, Ponchan 🌅😃.
Alerts are always a surprise to hear 👀I'm working in Pearl Island for about a week from today 😭Please don't have a big earthquake 🙏.
This is a 🏇 derby-watching companion.
The rice used is Gohyakumangoku from Toyama Prefecture
It has a slightly matured and astringent taste, and is crisp and clean.
The sweetness was subdued.
The design of the cup is also nice and wholesome.
This year's Derby was a tragedy.
It's a shame... Sincerely yours
98th cup of sake
Good morning, Mr. Pon-chan.
I was so impressed by the beauty of the scenery, even though I was watching it through a screen.
The taste of alcohol was also blown away.
It has a strong acidity and a unique taste.
The rice polishing ratio seems to be 70%, giving it a coarseness.
It gives the impression of being somewhat peculiar.
