Rich, but not cloying and sharp ✨. Dry and easy to pair with food. Very mild with fried tofu. Also good with garlic shoots and fried gizzards.

The bitterness is a little bit stronger on the palate, and the balance between bitterness and umami is a little bit more pronounced. However, it is balanced with a refreshing nibble.
The aftertaste is refreshing, but the sake-like flavor spreads from the back of the throat.

The top aroma has a hint of alcohol. Good acidity, pomegranate acidity. There is little sweetness and a slight bitterness. It is a dry sake, but it is not a spicy sake.

Cup of sake (3) - Jyobari
We met Jyokappari, which was introduced in "Izakaya Shinkansen".
The apple design of this sake made us think that it might have some sweetness, but it was a "traditional Chinese" sake. It has a strong spiciness and sharpness.
It has no peculiarities and goes in easily.
We will have it warmed up to accompany Yose-nabe.
