Tonight's closing dish was "Kikusen" from Nishida Shuzo, the brewer of Tasake sake. The first sip had a bitter taste unique to ginshu, but it gradually gave way to a delicious flavor. I was very satisfied.
This sake is also from Hirosaki. According to the owner, the brewery no longer produces the Jyobari brand of sake, and this is the last of the current batch. In that sense, it was a very precious drink.
