This sake uses germinated brown rice and the rice is purposely not polished to bring out the full potential of the rice. (Because of the use of germinated brown rice, it is classified as other brewed sake, not sake.) I have never tasted a sake that matches the word "mellow" so well. is the first time I have ever tasted a sake that fits the word "mellow" so well. It is a sake-like sake with a fluffy sweetness! And yet, it was easy to drink...! It was delicious.

Junmai Ginjo Yuki no Bijin made from 100% Yamadaho. The sweetness of Yamadaho was felt one moment, followed by a crisp and spicy taste characteristic of sake, with a clean aftertaste. It was very easy to drink and delicious.

Junmai Daiginjo A special bottle brewed by Yamawa Shuzo and Shinzawa Brewery. A fusion of "Yamawa" and "Hakurakusei". 15 degrees Celsius, 40% rice polishing ratio. This is really delicious, and I ran out to buy a second bottle.
