Yamada-Nishiki grown in-house is polished to 50%. The sake is left to mature slowly at low temperatures for about a year until it becomes mild and full-flavored before shipping.
It has a mellow mouthfeel, so is it Oshatoro?

It is fire-aged but has a gaseous taste and is very sweet and tasty.

I regretted not buying it after drinking it at the Takashimaya Sake Festival. It was just as good this time, but I personally prefer the Daishatoro by a narrow margin.
Awasake Sake Stripe
I've seen this before at Aeon, but this is the first time I've had it.
It is a low-alcohol sparkling sake that is easy to drink.
I didn't buy Takebayashi this time either 😭

This brewery grows its own rice using the "San'ou" rice cultivation method, in which the rice is starved three times, and is also committed to organic production.

Takebayashi Junmai Daiginjo catharsis
It's a new release from this season. It has a thick, sweet and delicious volume at the finish. The umami is firm, so it is not sweet but full-bodied. It has a sweet and sour finish with a hint of acidity.
Takebayashi Fukamari Shatoro
It has a deep, rich, mellow and delicious flavor.
I was allowed to drink all of them, but forgot to take pictures... but they were all delicious.
It was so good that I wanted bouken to drink it too, so I took him right after we joined 😁.
It seems that not many people know that there are many sake breweries in Okayama Prefecture, so I told him that I had been to Okayama for the Bon Festival and there are many sake breweries there, and he said that some of the breweries were coming to the next Japanese Sake Festival, so I said hello and said I would see him again, and we moved on.

The catharsis is so fresh that it is hard to believe it is fire-aged.
It is sweet and juicy, like a raw sake. I regret not buying it 😭.
Takebayashi Fukamari Shatoro tastes like it hasn't been aged for more than a year. It is supposed to be dry, but it doesn't seem that dry.
Karoyaka also tasted gorgeous.
The dry sake was also generally fruity.
Both types of amazake were also delicious.

Kaoru-shu. The mild sweet aroma is soft and gentle and easy to drink! It is well balanced and seems to be easy to match with a variety of meals. It was served with horse mackerel namenuri!
We had a mouthful. The initial mouthfeel is super fresh. It also has a fizzy feeling. After that, there is the firm taste of Yamadanishiki and a mildly sweet aftertaste. The aroma on the nose is also nice.
