I met this brewery at a Japanese sake festival at Takashimaya and became a fan the moment I drank it.
If you like sweet and juicy, you will definitely like this 😊.
Recently, they have been holding a "Moromi Gazing Party" at the brewery, where you can just stare at the surface of the fermenting moromi.
It is served cold.
The color is a little yellowish, so I think it has matured a little 😅.
The top aroma is slightly sweet ginjo aroma.
The mouthfeel is smooth, and the rich honey-like sweetness is impressive, but a little different from what I had before.
The rich sweetness is mellowed and the aroma on the nose gives the impression of maturity.
The sweetness lingers on the palate for a long time, and even though it has a slightly matured taste, it is still a delicious dessert sake.
But from now on, I'll drink it earlier...

The aroma is reminiscent of fresh apples. From the clear mouthfeel, an elegant acidity spreads and gently finishes with umami and bitterness.
Both the rice and koji rice are organically grown. It is elegant but also umami and drinkable.

A soft aroma like cotton or steamed rice. After a mild, mellow mouthfeel, a refreshing, elegant sweetness spreads, and from there, the umami spreads with the same aroma and flavor as the top shelf. After a tangy, spicy taste, it finishes with a slight bitterness and a lingering spicy aftertaste.
This sake has been aged at low temperature for 8 months after pressing. I buy this sake when it is released to enjoy its unique mellowness. The impression is that the mildness and sweetness are balanced by the spiciness.

I'm glad he remembered me as someone who complimented me a lot 🤣.
Since the last sake festival, Marumoto Sake Brewery has been hitting it out of the park with their rich, sweet and delicious sake.
At least I've had it before, but I reconfirmed its deliciousness.
Takebayashi Karoyaka Oshoro Junmai Ginjo Unfiltered Nama-shu
I found on the Internet that it is an unfiltered, unpasteurized sake that has been aged at a low temperature for one year. This one has "Karoyaka" in the brand name, but it is the best with a rich sweet flavor.

Junmai Daiginjo specs, not rich in sweetness and flavor. The aroma is gorgeous, but it is rather mild and refreshing just like the brand name.
