Whenever I find a sake from Kochi Prefecture, I remember that time and buy it after having encountered a delicious sake from Kochi Prefecture.
This sake has a slightly sour and sharp taste like grapes, but it is different from the sake I was expecting because it is more sake-like than fruity.

It has a gorgeous tropical pineapple-like aroma.
When you sip it, you will feel a slight gaseous sensation and the refreshing acidity and sweetness will make you feel like a pineapple.

This sake was made with Bikuyo's CEL-24.
Although Bikuyo itself has a strong image of being dry, the taste was fruity, as one would expect from CEL-24.
The freshness was maintained and the aroma was imparted, making it enjoyable in a white wine-like way.
Yesterday it was dry, today it is sweet.
The special Honjozo of Bikuyo is like drinking soft sugar water.
The pleasant sweetness is delicious.
It is a versatile food sake.
The bonito is delicious. Sake is also delicious.
Mr. Ota was in Kochi. I envy him.
Carefully selected Yamadanishiki rice is used at 55% polished rice. Junmai Ginjo-shu brewed with Kochi Prefecture's original yeast, AC-95. A summer sake with an impressive, elegant label depicting gracefully swimming Nishikigoi carp.
