It is said to be a light, dry junmai ginjo-shu brewed slowly at low temperature with "Matsuyama Mitsui" from Ehime Prefecture polished to 60% ginjo level!
The aroma is rather fruity and gentle, with a perfect balance of moderate acidity and umami, making it very easy to drink.
Of course, it has sweetness, but it is not too sweet, so it is very good as a food sake.
This time I paired it with sashimi of tuna and squid, fried white shrimp, etc., and it was excellent 😋.
I think it goes well with a wide range of dishes, including Japanese and Western cuisine 🐟.
It was a beautiful sake 🍶 that I never get tired of drinking ✨.
