First "Bikou".
When I drank Kameizumi last year, I was impressed by the aroma of CEL, a yeast from Kochi Prefecture, so when I found a sake made with CEL-24 from Biyoke, I was attracted to buy it!
The aroma is gorgeous, sweet and sour, reminiscent of pineapple🍍, and I am always amazed that such an aroma can be produced in sake.
It has a slightly gassy mouthfeel.
The taste has a very fruity aroma while it feels dry.
The acidity and tangy sharpness make it an interesting sake that can also be enjoyed as a food sake. ✨️

The aroma is fruity without being too flashy. There is also a slight carbonation that buffs the freshness.
The sweetness is restrained, and the cool, refreshing acidity is reminiscent of citric acidity. A summery sake with citrus sweetness and sourness despite its lightness.

We are drinking summer sake at home!
The fresh aroma of melon and watermelon with a light flavor comes through the nose and makes you feel fruity, while the strong umami, alcohol and acidity finish.
The spiciness of 15 degrees alcohol is not unpleasant and refreshing, and I fully enjoyed the summer sake character.
I tried it for the first time with Kochi sake and bonito tataki. I had heard it was like pineapple, but the gusto of the rice and the bonito were fantastic 😀.
