DATE SEVEN" is a super-limited product brewed by seven prestigious breweries in Miyagi Prefecture, and the leader breweries of SEASON 2 Episode 4, which will be released in 2025, are "Urakasumi" and "Hakurakusei". This is "Hakurakusei style mountain bottle".
This time, all breweries milled the rice together. It is a Junmai Daiginjo-shu made with the high technology of Hakurakusei, using the in-house preserved yeast of the Shinzawa Brewery.
DATE SEVEN SEASON2 episode4 Hakuboshi style -Earth Evolution
This is an annual project in which seven breweries in Miyagi Prefecture collaborate to make sake.
Two breweries take the lead and finish one bottle each, and this is the work led by the Niizawa Brewery of Hakurakusei.
The elaborate labels are also notable each year, this time featuring the contour lines of Osaki City, where the brewery is located, in a very stylish motif.
The flavor profile is definitely the usual Hakurakusei, without any flamboyance, and it stands there quietly. However, if you taste it carefully, you can see the complex and strange taste created by the remaining Rokuzo breweries. It is sweet, refreshing, and fresh, with a sourness and a slight bitterness that run through the mouth, so all we can do is to be filled with an inexhaustible sense of happiness.
The overall balance of the sake is not compromised, and it is a perfect food sake, which is why it is as skillfully brewed as ever.
We are happy to be able to regularly encounter a sake that has only one flaw: it disappears after a few sips.
It has a clean umakuchi taste, not sweet, but not so dry as to be called dry. According to the official website, it has a Sake meter rating of +4, which is quite understandable.
There are many fresh and fruity sake-like drinks nowadays, but this one is right in the middle of the royal road.
Since it was the season, I preferred it chilled. It is delicious!

Sake is clean and fruity on the palate with a hint of sweetness. It has a hint of sweetness, but it is dry. The lingering aftertaste is sharp with a good amount of astringency. Delicious.
For the record. Anniversary 1) Since it is our anniversary, we decided on Daiginjo. It is my favorite sake with a soft mouthfeel, aroma, and low sweetness.
