Yamakatsu
This is "100 sake tasters" from Sawanotsuru Sake Brewery in Nada-ku, Kobe City, Hyogo Prefecture.
The sake is made with 100% Yamadanishiki rice from Banshu and brewed with Nada miyamizu (miyamizu water from Nada).
The alcohol content is high at 18.5%, so I served it on the rocks.
Even so, it is a delicious sake with a good balance of full flavor, sweetness, gorgeous aroma, and refreshing acidity.

The founder was so moved by the legend of the "crane's ear falling" that he named the shrine "Sawanotsuru" after the legend.
This sake is limited to the Sawa-no-Tsuru Museum. It is very delicious and deeply tasty.
The aroma on the top is that of old time sake! The top aroma is that of sake in the old days! Suitable for a leisurely savor. This sake is also delicious when heated!
The wine is visibly light honey-colored, and although the legs are not very long, they are strong and long.
