I was happy to buy a bottle to drink for the first time and to support Noto.
I drank it thinking it was Sentori, but it was a bit different. It was too sour than I expected. After letting it sit for a few days, it finally reached the right level of saltiness.
I saw a notice that Sentori had gone all out for the sake making process. I wondered if they were going to try a difficult way of making sake. I am looking forward to drinking it.
I opened a new bottle of sake and now it's back to summer again, going back and forth between seasons 🎆.
I decided to go through with this one because I was buying too much, but after a while I saw it in the fridge at the liquor store...so I ended up buying this one.
The aroma is slightly citrusy and sour. It's Sentori.
When you sip it, you can feel a little bit of a sourness with a slight lemon-like bitterness, and it lingers on the side of your tongue.
It has a delicious flavor, but there is no sticking point, and you can drink it easily.
It is a delicious sake that can be drunk in large gulps due to its crisp acidity, or rolled around on the tongue to enjoy its gradual umami.

Since I ordered this instead of dessert, there was a lot of liquor in the bottle, so there was a lot of bias. It's slightly carbonated and juicy. Very lactic acid, but I also feel citric acid.

It is a sake for the Noto Peninsula disaster relief.
It starts with a refreshing aroma, followed by the sweet and sour taste characteristic of Sengkyo, and then it finishes.
The sourness remains, but it was refreshing when paired with salted salmon.
