Today is the sake brewery opening in Hiran. ...After some hesitation, I went to the Ghibli exhibition instead of going to the sake brewery opening. It takes about 3 hours from Fukuoka to the Hiran no Mori Sake Brewery by public transportation, so we gave up.
Then, Yoohee-san told me about a store that sells this sake, which is only available in Nagasaki, and I got it. Thanks for the info😊.
I have had the raw sake before.
Aroma of lactobacillus drink. It is an easy to drink sake with a good balance of umami and sweetness from slight sourness.

The first drink was a glass of "Hiran".
Light and somewhat light.
The complex umami with a bitter taste clears up afterwards, and the aftertaste is a little long!

I asked the proprietress if I could have something to accompany dinner at the inn, and she suggested this one from the Mori Sake Brewery in Hirado, which I was told is only available in Nagasaki Prefecture.
As the name "Classic" suggests, the sweetness and acidity were moderate and the rice flavor was strong, and the bitterness at the end was a bit strong.
The fried arakabu (scorpion fish) was especially delicious and went very well with the sake!

Tsukumoto is read as "ninety-nine", and as the description says, this sake is made from a special rice called "ninety-nine shizuku" grown by local people 🤔.
I wanted to buy this one too, but I gave up reluctantly because my refrigerator was over capacity.
I felt that my physical condition and liver capacity were at their limits, so I had to leave.
I hope to be in perfect physical condition next year_(:3)_

It's brewed with Mori Sake Brewery's specialty edible rice, Nikomaru, using the brewer's yeast HY2. ☺️
As described, it starts with a fruity ginjo aroma like melon, followed by the umami of rice due to the light nigori, and then a slightly subdued acidity that makes it a well-balanced sake 😊.
And I am very satisfied with my favorite sake that has a good sharpness and does not make me tired of drinking it 😊.
I bought this one as a bonus with the advance ticket so I can take my time and enjoy the changes in taste👍
The second glass I drank was this one, but I made the mistake of forgetting to take a picture of the bottle.
Unlike the Classic Nigori, it has a strong acidity and gaseous taste, and although it is crisp, you don't get tired of drinking it, and I felt it is my favorite sweet and sour shuwashu sake. ☺️
I couldn't buy this one in the store as it will be on sale soon, but I would like to buy it again someday when it is available in the store👍.

The rain calmed down a little in the afternoon, but I decided to drink only the limited-edition brewery-birakihiraki sake.
I knew Classic was only sold in Nagasaki Prefecture, but I had no idea there was a nigori version 😊.
I thought it was a little less sweet and more nigori, with the sweetness and acidity that you can only get from the "Hiramaran" 🤔.
As described, the rice flavor is rich, and it's a refreshing and crisp sake that is perfect for summer. ☺️
I bought an advance ticket so I bought this as a souvenir and will study the difference in taste over the next few days 😊.

Taste: Gorgeous aroma of white peaches and white grapes, full-bodied sweetness and rice flavor.

Tomorrow and the day after tomorrow, there will be a brewery open house at Mori Sake Brewery...but I can't make it, so I'm going to enjoy Hiran at home 😌.
Well, today we opened a bottle of Aoten🌌 from Hiran.
When you open the bottle, it has a nice fruity apple or pear flavor. A good fruity apple🍎 or pear🍐? like ginjo aroma ✨.
As expected, it's the kind that makes you grin before you drink it 😁 lol.
The first sip from the first sip is a bit of a spiciness 🫧 and a raspberry🍇 like taste 😍.
I can also taste a bit of bitterness, but it's just right and has a nice 👌.
I can feel the fatigue of the week is healed 🤣 lol.

But as a fan of Tobiraman, I am a little concerned that this season as a whole seems to have less sizzling flavor than last year 🤔.
I heard from a sake distributor that the rice is not melting well....
After all, rice is an agricultural crop, so it must be greatly affected by climate change... 😭
However, I can only take my hat off to all the brewers who brew delicious sake including that 🙇.
