This is a sake with a mandarin orange taste that I have never experienced anywhere else. It has a fresh gasiness, but at the same time, it is sweet and tasty, with a sourness that is reminiscent of Onshu mandarin oranges. Not only the taste, but also the aroma is strangely mild with a hint of mikan.
This is Kagura's unfiltered, unpasteurized sake. It has a fruity strawberry-like sweetness and aroma that is typical of Kagura, and is extremely juicy with a shwashy, fizzy gas feeling.
The moderate acidity and slight bitterness give it an excellent sharpness in the latter half.
I went with my wife to Asakita-ku, Hiroshima City, to a store that makes additive-free soy sauce and sells other seasonings such as mirin and vinegar, etc. The owner is acquainted with the toji (master brewer) of Mori Sake Brewery, so we bought sake at a store that only sells sake from Tobiran.
Koji rice is 20% Yamadanishiki, Kake rice is 80% Nikomaru.
Polishing ratio is 60% for Koji rice and 25% for Kake rice
Alcohol content 14
They cut down the edible rice to 25% Nikkomaru 😊.
When the bottle is opened, there is a great bong sound, the aroma is gorgeous, and while it starts with sourness, there is a chili gas feeling, a moderate sweetness comes out, and from there it finishes with bitterness 🍶.
The taste is elegant and beautiful.
It's delicious with a good use of acidity 😄.
My wife loves the atmosphere of the store, so I'm sure we'll be going back to buy some more Hiran 😙.

The store is called Yamane Sake Shop in Shiroki-cho. They used to be a sake brewery but now they only make soy sauce.

We bought this sake out of curiosity when we heard that there was a very good sake in Nagasaki, Tobiran! It's a good thing I had a regular sake. Today, I'm going to drink it with motsu nabe (hot pot)!
It has a very sweet, raisin-like, grapey aroma. The water goes in very softly and smoothly, and the ripe sweetness of raisins and bananas envelopes you. The waitress said it is a sake like Shinmasa.
