I got a call from my friend Tyrol about a new arrival... When I entered the store, I found that some sakes had arrived today, and there were quite a few first encounters, so I started with Tobirazumi.
It has a slight aroma of koji malt.
It is clear and light in the mouth, but after a while you can also taste sourness and bitterness, and I think it is a slightly sweet sake.

Acid to the last degree! Yet the aftertaste is bitter and mysterious!
Sour like a crisp apple!
But the end is slightly bitter, similar to that of coffee or autumn fish.
It is an interesting and mysterious sake! I had the impression that it was a very interesting and mysterious sake.
It went well with Chinese jellyfish.
I tend to drink sweet and tasty sake, so I found that it is good to be adventurous once in a while.
It has been a long time since I have had a bottle of sake in the fridge because of work-related exams!
I have a different impression from the others. It must be the smell I don't like. Ruins the sweet and sour. Far below expectations. Expect after tomorrow.
The smell disappeared after 2 days. The sweetness is quite strong. I want more flavor.

Update.
After a while after opening the bottle, the taste becomes mellow and delicious! The taste is so delicate that it is hard to tell if you drink it right after eating.
It is very easy to drink, with a strong acidity followed by a touch of sweetness. It is a sake that can be enjoyed on its own. I finished it after a day off from drinking and a drinking session, but later on, the acidity became stronger than the sweetness, and I might have preferred it on the first day.
It is good to have such a unique and assertive flavor that leaves a lasting impression.
