Slightly acidic, but very gentle and mild. It has a mild taste with umami due to the fact that it is an autumn sake.
The aftertaste is clean and the aftertaste is rather short.
We had it with nabe (hot pot). It goes well with autumn dishes.

This is the first hiyaoroshi after the start of this year. The first bottle was a bottle of Ryusei, which I have drunk many times.
The rarity is a little high. The store where it is sold is on the homepage of the brewery.
The recommended temperature is room temperature or hot, but I took it out of the refrigerator and let it sit for a while before drinking.
There is not much aroma.
It has a slightly sour taste and a bitter taste (?) peculiar to chilled sake. The bitter(?) and rich(?) taste, which is characteristic of cold grated sake, spreads in the mouth. It has a slightly acidic taste, but the bitterness(?) and richness(?) characteristic of cold-aged sake spreads in the mouth. The characteristic weight of Omachi is also felt.
The aftertaste is rather long.
We had it with fried oysters. It seems to go well with foods with strong flavors. According to the official recipe, it goes well with mushroom dishes.

Medium flavor. Sawanoi has an image of being dry, but the sharpness gives the impression of being round and mild.

When I asked what summer sake they recommended to drink by itself on Tanabata night, they recommended Amabuki and Mae. I chose Mae, which I had never had before. Since it has been raining all morning today, I decided to have a real (?) drink later in the day. I'm reviewing it looking up at the night sky, which is somewhat clear now, instead of the night of the Tanabata Festival.
The Ko-Imari Sake Brewery has a list of distributors on their website, so please check it out. It is not available in the Kansai region, so those who live outside of the Tokyo area may find it a bit rare.

Fruity aroma like melon.
The taste is sweet like melon(?). The first taste is sweet like melon (?) and acidity like gas, but it gradually gives way to a thicker rice flavor. It is somewhat complex. It is fresh and fruity, but also has a thick and firm element typical of junmai sake.
The sharpness is a bit sharp and the aftertaste is normal.
I drank it by itself, but it would be better to drink it with a side dish.

It is a summer sake from Ryusei's limited series of seasonal sake, which I have drunk several times.
The store selling it is listed on the Fujii Sake Brewery's website. I think the rarity is high.
Drink it cold.
The aroma is slightly floral, with a hint of sugary, not fruity, rummy flavor.
Medium flavor, refreshing but acidic. Complexity is there. Gradually, the full flavor characteristic of Yamadanishiki comes through.
The aftertaste is crisp and the aftertaste is short.
In a previous post, I compared Ryusei's Yamada-Nishiki to a "Shinryu", a monster from Dracula. This sake also has the taste of a "Shinryu" with an aura of smartness and dominance. However, it also has a faint breath.
The website says it goes well with summer vegetables. I would definitely try it with light-flavored food.

The rarity is somewhat high.
It was sold refrigerated, so it was served cold.
As the name suggests, it has an umami flavor, but the spiciness gradually comes to the surface.
The spiciness lessens as the palate becomes accustomed to it over the course of several sips, but the robust umami of the rice continues to be present.
We recommend drinking it with meat dishes or strong flavored food.
It is also delicious hot, so next time I would like to try it hot.

It is a doburoku, which you don't see very often, but it is a product of the Japan Famous Sake Association.

Aroma of sake lees peculiar to nigori sake.
I got the impression that it was sweeter than other nigori sake I have had. When I swallowed it, I felt a strong sourness. Overall, 60% sweetness and 40% acidity.

It is a limited series of Ryusei, which has a cool name anyway.
Last time, I had a bottle of Wakami no Dry (red label) and Hibi Nikkaku (green label). As I myself am a Dracula fan, the former reminded me of Master Dragon and the latter of Shinryu when I compared them to dragon series. The same is true this time.
The aroma is invigorating, not fresh, but green, like a forest.
The first sip is surprisingly tart and somewhat heavy.
The aftertaste is strongly acidic, and may have the longest aftertaste of the three we drank.
According to the official website, at first glance it appears to be quiet and delicate, but it also has a surprisingly unique side, and the deeper you get into a relationship with it, the more attractive it becomes. I found this very clear in my drinking.
Then, "Great Dragon," who is a powerful and dignified enemy in Dracula V, but an ace-class existence if he becomes a friend, is very appropriate.
